Ingredients

  • 1 cup mint leaves fresh, stems removed
  • 4 limes sliced into wedges
  • 1 cup rum
  • ½ cup simple syrup *
  • 4 cups ice
  • 6 cups club soda

Instructions

  • Muddle the mint and limes: Add the limes, mint, and rum to large glass. You can muddle right into the pitcher, but I find adding everything to a large glass is much easier to the limes can't slip away.  Muddle until the limes are crushed and mint leaves are bruised.
  • Finish the mojito: You can add ice straight to the pitcher now or put ice individually in glasses to avoid having the mojito in your pitcher becoming watered down. Add the muddled mint and lime to your pitcher and rinse the glass with ½ cup soda water. Add the rest of the soda to the pitcher along with the simple syrup, mix with a large spoon, and serve.

Notes

  1. *To make simple syrup, mix 1 cup granulated sugar with 1 cup water in a saucepan. Bring to a simmer over medium heat, stirring well until all the sugar has dissolved. Allow to cool for 10-15 minutes.
  2. Alternatively, you can also place the mint, lime juice only and everything else in a blender and blend it all away. This way there's a more intense flavor of the mint.
