Easy Monster Cookies

Preheat Oven: Preheat the oven to 325°F. Line a baking sheet with parchment paper.
Mix Ingredients: Add the, butter, eggs, cream cheese and vanilla extract to a large bowl and mix until smooth. Add the cake mix and mix until well combined.
Add Color: Divide the cake batter between 4 bowl, add a different dye color to each bowl and mix well. Roll dough into balls and then roll each ball through powdered sugar. To make this easier, use an ice cream scoop. Place cookies on prepared baking sheet.
Bake: Transfer the baking sheets to the oven and bake for 10 to 12 minutes. While the cookies are still warm stick the candy eyeballs over the cookies. Cool completely before serving.
- Optional step: If you find the cake batter is too soft and you cannot roll them into balls, refrigerate the dough for 30 minutes first.
- Store leftover cookies in an airtight container for 4 days at room temp, or up to 1 week in the fridge.
- Wait until your cookies have completely cooled, then freeze in an airtight container or plastic freezer bag for up to 3 months.
