- 6 slices bacon thick cut, sliced
- 2 tablespoon butter unsalted
- 1 large leek cleaned and thinly sliced
- 8 ounce mushrooms cleaned and chopped
- salt and pepper to taste
- 4 ounce feta cheese crumbled
- 6 large eggs
- 1 cup cherry tomatoes roasted
- 1 tablespoon fresh parsley chopped
Preheat Oven: Preheat the oven to broil.
Cook Bacon: Add the bacon to a large skillet and cook until crispy, about 6 to 8 minutes. Transfer the bacon to a paper towel lined plate to drain. Discard the bacon fat, leaving 1 tbsp of it in the skillet.
Cook Veggies: Add the 2 tbsp of butter to the skillet and melt over medium heat. Add the leeks and cook until softened over medium low heat, about 5 minutes. Add the mushrooms to the skillet and cook for another 5 minutes until the mushrooms start to brown. Season with salt and pepper to taste. Add the bacon back to the skillet and stir.
Make Egg Mixture: In a bowl, whisk the feta cheese with the eggs. Pour this mixture over the leek and mushroom mixture, making sure it's fully covered in egg.
Cook: Transfer the skillet to the oven and broil for 3 minutes or until the frittata starts to brown on top and it no longer jiggles. If your oven doesn't have a broil function, preheat it to 375°F and cook the frittata for 18 to 20 minutes or until browned.
Serve: Serve with roasted cherry tomatoes and garnished with fresh parsley.

- Frittatas are typically served at room temp, so don't worry about it being served hot. It will taste good no matter what!
- If you don't have a broiler function on your oven, you can bake it at 375!
- Transfer leftover frittata to an airtight container, or cover skillet tightly with saran wrap or foil and store in the fridge for up to 3 days.
