Cook Rice: Add the rice, water, salt and butter to a large saucepan. Bring to a boil, cover the saucepan and reduce heat to low. Simmer for 20 minutes.
Finish & Serve: Remove from heat, and fluff the rice with 2 forks. Stir in the lime juice, lime zest and cilantro. Taste for seasoning and adjust with salt as needed.
Basmati long grain rice actually works best with this recipe, more than plain rice.
Be gentle when fluffing the rice with 2 forks. You just want to fluff it up gently and finally at the end add the lime and cilantro.
If you love a nutty flavor to your rice, you can brown the rice first in the butter until nice and lightly browned.
While cilantro is one of the key flavors of the dish, it's one of those herbs that some people can’t stand. If that’s the case with you, I recommend substituting with fresh parsley or trying my Mexican rice instead.
Be sure to store this cilantro lime rice as soon as it’s cooled as rice is a breeding ground for bacteria. Store in an airtight container in the fridge for 3 – 4 days.
If freezing, store the rice in a freezer bag with the air pressed out. Thaw overnight in the fridge and fluff the rice before reheating. Your cilantro lime rice will last up to 3 months in the freezer.
