Mushroom Chicken Bites

These Mushroom Chicken Bites are a wonderful, low carb, flavorful dish that will delight anyone who especially has a love of mushrooms. The chicken thigh pieces are so tender and juicy, coupled with the rich taste of the cremini mushrooms that absorb all the fantastic seasonings in this recipe.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken thighs boneless and skinless, cut in 1-inch pieces
  • 1 teaspoon Italian Seasoning
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon pepper or to taste
  • ¼ teaspoon red pepper flakes
  • 4 tablespoons butter unsalted, divided
  • 8 ounces cremini mushrooms sliced
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 cloves garlic minced
  • 2 tablespoons fresh parsley chopped

Instructions

  • Cook the chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken thigh pieces and season with the Italian seasoning, salt, pepper and red pepper flakes. Stir and cook for about 5 to 6 minutes until the chicken browns and is cooked through. Transfer the chicken to a plate and set aside.
  • Cook the mushrooms: Add 2 tablespoons of the butter to the same skillet and melt. Add the sliced mushrooms then season with onion and garlic powder. Stir and cook for about 4 minutes or until the mushrooms start to brown.
  • Finish the dish: Add the chicken back to the skillet along with any juices released in the plate. Add remaining 2 tablespoons of butter and minced garlic. Stir everything together and cook for 1 to 2 more minutes. Taste for salt and pepper and adjust as necessary. Remove from heat and garnish with parsley. Serve warm.

Notes

  1. If you're really short on time, pick up a rotisserie cooked chicken instead of cooking your own.
  2. Mushrooms need to be cleaned. You can use the dry method of brushing them or wiping them with a cloth. If you choose to wash them with water, they should be dried as much as possible, since they act like sponges, but either method will work.
  3. Place any leftovers in an airtight container for up to 3-4 days. It heats up wonderfully either in the microwave or on the stovetop.
  4. Once thoroughly cooled, place the chicken and mushroom mixture in an airtight container or, freezer-safe bag and store in the freezer for up to 4 months. When thawed, heat through and serve with your side dish.
