  • 1 large onion chopped
  • 1 large carrot chopped
  • 2 stalks celery chopped
  • 2 chicken breasts boneless and skinless, cut in one inch pieces
  • 1 cup wild rice and quinoa mix
  • 10 ounce cream of mushroom soup (1 can)
  • 1/2 teaspoon thyme
  • 4 cups chicken broth low sodium
  • 4 cups water
  • salt and pepper to taste
  • 1 teaspoon chicken bouillon granules


  • Chop all the vegetables and chicken and literally throw all the ingredients together in the crockpot and stir them up a bit. If you don't have wild rice and quinoa mix, you can use just wild rice, or if you have them separate, 1/2 cup of each.
  • Cook in crockpot for 8 hours on low or 4 to 6 hours on high.
