Ingredients

Garnish

  • 1 tablespoon lemon juice
  • 1 tablespoon sugar granulated or superfine
  • lemon wedges or twist of lemon peel

Cocktail

  • 1 ½ ounce earl grey tea brewed strong*
  • 1 ½ ounce gin
  • 1 ounce lemon juice
  • ½ ounce egg white
  • 1 ½ ounce simple syrup
  • ½ cup ice

Instructions

  • Prepare the martini glass. Add the lemon juice and sugar to separate small shallow plates. Dip the rim of the martini glass in the lemon juice, then in the sugar to coat
  • Add the cocktail ingredients to a cocktail shaker and secure the lid. Shake vigorously for 20-30 seconds. Strain into the prepared martini glass and garnish with a twist of lemon peel.

Notes

  1. *Strong brewed earl grey tea: To avoid bitter tea and, as a result, a bitter cocktail, brew your tea for the amount of time stated in the instructions, but use twice as much tea as directed. Do not brew your tea longer than instructed or it will release to many tanins giving it a drying and unpleasant bitterness.
