Ingredients

  • 1 pound Italian sausage mild or spicy, cut into ½ inch pieces
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 14.5 ounces diced tomatoes 1 can
  • 8 ounces tomato sauce
  • 12 ounces pasta such as penne or fusilli, uncooked
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • ½ cup Parmesan cheese grated, for serving

Instructions

  • In a large pot or Dutch oven, cook the sausage over medium-high heat until browned, about 5 minutes.
  • Add the onion and garlic and cook until softened, about 3-4 minutes.
  • Add the diced tomatoes, tomato sauce, pasta, broth, basil, oregano, salt, and pepper. Stir well to combine.
  • Bring the mixture to a boil, then reduce the heat to medium-low and cover the pot.
  • Simmer the pasta for about 15-20 minutes, or until the pasta is cooked through and the sauce has thickened. You may have to stir occasionally to make sure the pasta doesn't stick to the pot.
  • Serve the pasta hot, garnished with grated Parmesan cheese, if desired.
