- 1 pound Italian sausage mild or spicy, cut into ½ inch pieces
- 1 large onion chopped
- 4 cloves garlic minced
- 14.5 ounces diced tomatoes 1 can
- 8 ounces tomato sauce
- 12 ounces pasta such as penne or fusilli, uncooked
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- salt and pepper to taste
- ½ cup Parmesan cheese grated, for serving
In a large pot or Dutch oven, cook the sausage over medium-high heat until browned, about 5 minutes.
Add the onion and garlic and cook until softened, about 3-4 minutes.
Add the diced tomatoes, tomato sauce, pasta, broth, basil, oregano, salt, and pepper. Stir well to combine.
Bring the mixture to a boil, then reduce the heat to medium-low and cover the pot.
Simmer the pasta for about 15-20 minutes, or until the pasta is cooked through and the sauce has thickened. You may have to stir occasionally to make sure the pasta doesn't stick to the pot.
Serve the pasta hot, garnished with grated Parmesan cheese, if desired.
