- 1 pound pizza dough
- 1 tablespoon olive oil
- 2 cups mozzarella cheese shredded
- ¼ cup Parmesan cheese freshly grated
- 1 cup cherry tomatoes halved
- 6 slices bacon fried and roughly chopped
- 6 eggs
- 2 tablespoons chives fresh, chopped
- 1 tablespoon parsley fresh, chopped
Preheat oven to 500℉.
Spray a baking sheet (15.25 x 10.25 inches) with cooking spray.
Roll out the pizza dough and place it on the pizza baking dish. Drizzle the dough with a bit of olive oil.
Arrange the mozzarella cheese evenly over the dough. Sprinkle with Parmesan cheese.
Top with bacon and tomato. Crack 6 eggs on the pizza.
Bake for 10 to 15 minutes or until the edge is golden brown.
Garnish with chives and parsley.
- Cheese: Mozzarella is my favorite but you can also use Monterey Jack, or even a little feta would be nice.
- Protein: If you want to swap out bacon, try sausage, ham, or even leftover rotisserie chicken.
- Pizza dough: To keep this nice and quick, use store-bought pizza dough or if you've got a bit more time, homemade pizza dough is the way to go.
- Reheat leftover pizza in the oven at 350℉ for about 10 minutes or until heated through. You can also reheat in the air fryer to keep it nice and crispy.
