Breakfast Pizza

This Breakfast Pizza is the perfect hearty morning meal. Crispy bacon, cheese, perfectly baked eggs all piled high on a golden crust. Perfect for breakfast, brunch or a snack!

Ingredients

  • 1 pound pizza dough
  • 1 tablespoon olive oil
  • 2 cups mozzarella cheese shredded
  • ¼ cup Parmesan cheese freshly grated
  • 1 cup cherry tomatoes halved
  • 6 slices bacon fried and roughly chopped
  • 6 eggs
  • 2 tablespoons chives fresh, chopped
  • 1 tablespoon parsley fresh, chopped

Instructions

  • Preheat oven to 500℉.
  • Spray a baking sheet (15.25 x 10.25 inches) with cooking spray.
  • Roll out the pizza dough and place it on the pizza baking dish. Drizzle the dough with a bit of olive oil.
  • Arrange the mozzarella cheese evenly over the dough. Sprinkle with Parmesan cheese.
  • Top with bacon and tomato. Crack 6 eggs on the pizza.
  • Bake for 10 to 15 minutes or until the edge is golden brown.
  • Garnish with chives and parsley.

Notes

  1. Cheese: Mozzarella is my favorite but you can also use Monterey Jack, or even a little feta would be nice.
  2. Protein: If you want to swap out bacon, try sausage, ham, or even leftover rotisserie chicken.
  3. Pizza dough: To keep this nice and quick, use store-bought pizza dough or if you've got a bit more time, homemade pizza dough is the way to go.
  4. Reheat leftover pizza in the oven at 350℉ for about 10 minutes or until heated through. You can also reheat in the air fryer to keep it nice and crispy.
