Dirty Fries
Dirty Fries are crispy fries piled high with homemade beef gravy, bacon, banana peppers, tomatoes, green onions, parsley and a creamy mayo drizzle. They’re messy, over the top, and perfect for game day or late night cravings.

- 1 pound potato fries I used McCain
- 6 slices bacon chopped and fried
- ½ cup banana peppers
- 3 green onions chopped
- 1 medium tomato chopped
- 1 tablespoon fresh parsley chopped
- ¼ cup mayonnaise
For Gravy
- 1 tablespoon butter unsalted
- 1 tablespoon all-purpose flour
- ½ cup beef broth low sodium
- ¼ teaspoon salt or to taste
- ¼ teaspoon pepper or to taste
Preheat the oven to 450℉.
Place the potato fries in a single layer on a baking sheet, no need to grease the baking sheet. Bake the fries for 15 to 18 minutes or until golden and crispy.
In the meantime, prepare the gravy. In a small saucepan, melt the butter over medium-high heat. Add the flour and whisk until it becomes paste and it slightly turns brown.
Add the beef broth a little bit at a time, whisking constantly until all the broth has been added. Continue to cook for a another minute or so until the gravy thickens. Season with salt and pepper.
To assemble the fries, place the fries in a plate, drizzle generously with gravy, top with bacon, banana peppers, green onions, tomatoes and parsley, then finish off with a drizzle of mayonnaise.
- Fries: Frozen works great for speed, but hand cut fries are amazing if you’ve got the time. You can also air fry them at 400°F for about 12 to 15 minutes, shaking the basket halfway through.
- Bacon: Cook until crispy so it stays crunchy under the gravy.
- Banana peppers: The tang cuts through all the richness. Don’t skip them unless you absolutely have to.
- Mayo drizzle: Thin with a splash of milk for smooth drizzling.
- Make ahead: Cook bacon and make gravy ahead, then assemble fries just before serving for the best texture.
- Variations: Try sweet potato fries, add cheese curds, or swap banana peppers for jalapeños for extra heat.
