Ingredients

  • 2 pounds ripe tomatoes quartered
  • ½ English cucumber peeled and roughly chopped
  • 1 medium red bell pepper chopped
  • 1 medium shallot peeled and chopped
  • 2 cloves garlic minced
  • ¼ cup olive oil extra virgin
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper

To serve

  • fresh basil chopped

Instructions

  • In a blender, add the tomatoes, cucumber, bell pepper, shallot garlic, olive oil, red wine vinegar, salt and pepper and puree until smooth. (You may need to work in batches, depending on the size of your blender.)
  • Chill the gazpacho in the refrigerator for at least 30 minutes or until ready to serve.
  • When ready to serve, pour the gazpacho into individual bowls or glasses and garnish with croutons and chopped basil, an extra drizzle of olive oil, if desired.
