Ingredients

For the Marinade:

  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Skewers

  • 1 medium red bell pepper cut into 1-inch pieces
  • 1 medium yellow bell pepper cut into 1-inch pieces
  • 1 medium green bell pepper cut into 1-inch pieces
  • 1 medium red onion cut into wedges
  • 2 medium zucchini sliced into thick rounds
  • 1 cup cherry tomatoes
  • 8 ounces mushrooms whole or halved if large

Instructions

  • In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, dried basil, salt, and black pepper.

  • Place the red bell pepper, yellow bell pepper, green bell pepper, red onion, zucchini, cherry tomatoes, and mushrooms in a large bowl. Pour the marinade over the vegetables and toss to coat them evenly. Let them marinate for at least 15 minutes.

  • Preheat your grill to medium-high heat.
  • Thread the marinated vegetables onto skewers, alternating the types of vegetables for a colorful presentation.

Notes
