For the Marinade:
- ¼ cup olive oil
- 2 tablespoons balsamic vinegar
- 2 cloves garlic minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon salt
- ½ teaspoon black pepper
For the Skewers
- 1 medium red bell pepper cut into 1-inch pieces
- 1 medium yellow bell pepper cut into 1-inch pieces
- 1 medium green bell pepper cut into 1-inch pieces
- 1 medium red onion cut into wedges
- 2 medium zucchini sliced into thick rounds
- 1 cup cherry tomatoes
- 8 ounces mushrooms whole or halved if large
In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, dried basil, salt, and black pepper.
Place the red bell pepper, yellow bell pepper, green bell pepper, red onion, zucchini, cherry tomatoes, and mushrooms in a large bowl. Pour the marinade over the vegetables and toss to coat them evenly. Let them marinate for at least 15 minutes.
Preheat your grill to medium-high heat.
