- 1½ cups pitted dates
- 1 cup shelled pistachios
- 6 ounces dark or semi-sweet chocolate chopped
- 1 teaspoon coconut oil or neutral oil optional (for smoother chocolate)
- 2 tablespoons pistachios finely chopped, for topping
Add 1½ cups pitted dates and 1 cup pistachios to a food processor. Pulse until the mixture breaks down and starts to stick together. It should hold when pressed between your fingers.
Scoop out about 1 tablespoon of the mixture at a time and roll it into balls. Place them on a parchment-lined plate or baking sheet.
Refrigerate the balls for 15 to 20 minutes to firm them up.
Melt 6 ounces chocolate in a heatproof bowl set over simmering water or in the microwave in 20-second bursts, stirring between each. Stir in 1 teaspoon oil if using.
Dip each chilled ball into the melted chocolate, letting any excess drip off, then place back on the parchment.
Sprinkle the tops with chopped pistachios while the chocolate is still wet.
Refrigerate for another 10 to 15 minutes, or until the chocolate is set.
- Use soft dates: Soft Medjool dates work best because they blend easily and help the mixture stick together. If your dates feel dry, soak them in warm water for about 5 minutes, then drain before blending.
- Don’t over process: Pulse the dates and pistachios just until the mixture starts to clump together. A little texture from the pistachios makes the finished bites much nicer.
- Chill before dipping: A quick chill helps the balls firm up so they keep their shape when dipped in the melted chocolate.
- Thin the chocolate if needed: If the chocolate feels thick while dipping, stir in a teaspoon of coconut oil. It helps create a smoother coating.
- Make them ahead: These keep well in the fridge for several days, making them a great make ahead snack or little after dinner treat.
