Chicken Pesto Caprese Pasta
This Chicken Pesto Caprese Pasta is one delicious dinner that's ready to put on the dinner table in under 30 minutes. Enjoyed even by your picky eaters.
- 8 oz pasta uncooked, such as penne (about 2 cups)
- 1/4 cup pesto
- 1 tbsp olive oil
- 1 cup cherry tomatoes cut in half
- 1 cup bocconcini cheese
- 2 chicken breasts cooked and sliced
- Balsamic reduction
Cook the pasta according to package instructions. Drain.
In a large bowl toss pesto and cooked pasta together so that the pasta is fully coated. Drizzle with the olive oil and stir. Add in the tomatoes, bocconcini and toss.
Top with sliced chicken and drizzle with the Balsamic reduction.

Bocconcini are small mozzarella cheeses and they come in different sizes. They are semi-soft white and rindless, unripened mild cheeses.
Balsamic reduction of balsamic glaze is a concentrated and thickened version of balsamic vinegar. You can buy it in stores or make it yourself by cooking down balsamic vinegar until it thickens and reduces, about 15 minutes.
