For the Peanut Butter Fudge Base:
- 1 cup creamy peanut butter
- 14 ounces sweetened condensed milk 1 can
- 1 tablespoon unsalted butter
- ½ cup salted peanuts roughly chopped
- 1 teaspoon vanilla extract
For the Chocolate Coating:
- 1 cup milk chocolate chips
- 1-2 teaspoons vegetable oil
For the Caramel Drizzle:
- ½ cup caramel sauce store-bought, warmed slightly for easier drizzling
In a medium saucepan over low heat, combine the peanut butter, sweetened condensed milk, and butter. Stir continuously until the mixture is smooth and well blended (about 3–4 minutes). Remove from heat, then stir in the vanilla extract and chopped peanuts.
Pour the warm mixture into a lined 8×8-inch baking pan. Smooth the top with a spatula. Refrigerate for at least 2 hours until the mixture is firm enough to cut into bite sized squares.
In a microwave safe bowl, combine the milk chocolate chips with the vegetable oil. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth. Alternatively, melt over a double boiler.
Cut the chilled fudge base into bite sized squares. Using a fork or toothpick, dip each square halfway into the melted chocolate, allowing any excess to drip off. Place the dipped pieces on a parchment-lined baking sheet. While the chocolate is still soft, drizzle a thin layer of caramel sauce over the top of each bite.
Refrigerate the assembled bites for an additional 20–30 minutes to allow the chocolate and caramel to firm up. Once set, store the bites in an airtight container in the refrigerator.
- Peanut Butter: Use creamy peanut butter, not natural, oil separation makes the base too soft.
- Peanuts: Salted peanuts bring that Snickers vibe; honey roasted is also amazing. Chop them, don’t pulverize them.
- Chocolate Coating: Add a splash of vegetable oil to keep the melted chocolate smooth and glossy.
- Caramel Drizzle: Warm it slightly before drizzling so it flows instead of clumping.
- Storage: Store in the fridge up to 2 weeks or freeze for up to 2 months.
- Make Ahead: Perfect for holiday trays, dessert boards, or freezer snacks, make a batch now, thank yourself later.
