- 2-3 pounds carrots peeled and trimmed
- 3 tablespoons olive oil
- ¼ cup honey
- 1 teaspoon garlic powder
- salt and pepper to taste
- 2 tablespoons fresh parsley chopped
Preheat your oven to 400°F.
In a small bowl whisk together the olive oil, honey, garlic powder salt and pepper.
Arrange the carrots in a single layer on a baking sheet. Drizzle the honey mixture over the carrots and toss them around to make sure the carrots are thoroughly coated.
Place the baking sheet in the oven and roast for 25-30 minutes or until the carrots are tender and start to brown.
Garnish with fresh parsley and serve immediately.
