Honey Roasted Carrots

I like to serve carrots alongside many dinners, but I must say that these honey roasted ones are by far much better than plain Jane carrots. They’re so good, I love to snack on them all by themselves.

All you need to do is combine olive oil, sweet honey, garlic powder and a bit of salt and pepper, then pour over the carrots and roast. Now here’s the best part; when you combine all these flavors, then roast the carrots in the oven, you end up with one easy side dish that will complement any dish to the max. That extra caramelized sweetness really does make all the difference.

This terrific side dish is a fantastic choice when hosting a family gathering. You just need to combine the ingredients and roast them for an unbelievably easy and great tasting veggie side that is incredibly quick to put together. Easily double the recipe for an even larger crowd, but just make sure to use a larger pan or roaster.

Honey Roasted Carrots Highlights

Ingredients You’ll Need

  • Carrots – I’ve used fresh garden carrots for the best taste. Leaving the stalk on also makes for an impressive look. Try this next time you’re hosting a dinner, it will impress your guests.
  • Oil – I like to use a high quality olive oil for best results.
  • Honey – Use your favorite honey. You can always substitute it with maple syrup, agave syrup or even brown sugar.
  • Garlic – You’ll need some garlic powder for a little garlic taste.
  • Parsley – I like to add some fresh parsley to garnish the carrots for a little pop of color.

How To Make Honey Roasted Carrots

  1. Preheat the oven: Preheat your oven to 400°F.
  2. Make honey mixture: In a small bowl whisk together the olive oil, honey, garlic powder salt and pepper.
  3. Prepare carrots: Arrange the carrots in a single layer on a baking sheet. Drizzle the honey mixture over the carrots and toss them around to make sure the carrots are thoroughly coated.
  4. Roast the carrots: Place the baking sheet in the oven and roast for 25-30 minutes or until the carrots are tender and start to brown.
  5. Garnish and serve: Garnish with fresh parsley and serve immediately.

Should I Peel My Carrots Before Roasting?

It’s really up to you! As long as you wash them really well to remove any dirt from them, you really don’t have to peel them. Obviously peeling them takes a bit more time but as far as taste goes, they taste the same either way.

How Long Does It Take To Roast Carrots?

It really depends on the thickness of your carrots. At 400°F, it could take anywhere from 20 to 45 minutes. Even if you cut them in chunks it could still take the same time, especially if your carrots are really big. Your carrots are cooked when they are fork tender.

Expert Tips

  1. The baking time can vary based on how thick your carrots are. You want to cook them until they’re fork tender.
  2. Play around with spices for different flavor profiles. Try adding a pinch of cinnamon or nutmeg to the honey mixture.
  3. You can also use baby carrots if you prefer.
  4. For a change, use equal amounts of maple syrup, agave syrup or even brown sugar.
  5. Any protein such as chicken, turkey, pork or beef goes very well with these carrots.
  6. Try using this honey mixture on different veggies, such as brussels sprouts, asparagus or butternut squash.

Leftovers

Place cooled honey roasted carrots in an airtight container and store in the refrigerator for 3-5 days.

Can You Freeze Cooked Carrots?

Yes, you can freeze cooked carrots for up to 9 months. They will retain their flavor and nutritional value, but lose their firmness and texture. You can freeze carrots that are roasted, mashed, or mixed with other vegetables as well as carrot soup.

  • 3 tablespoons olive oil
  • ¼ cup honey
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • 2 tablespoons fresh parsley chopped
