A super simple recipe for tender Honey Roasted Carrots using only a few staple pantry items. These Roasted Carrots are delicious with an incredible honey caramelized finish, perfect side dish to any meal, but also ideal for any holiday!

I like to serve carrots alongside many dinners, but I must say that these honey roasted ones are by far much better than plain Jane carrots. They’re so good, I love to snack on them all by themselves.
All you need to do is combine olive oil, sweet honey, garlic powder and a bit of salt and pepper, then pour over the carrots and roast. Now here’s the best part; when you combine all these flavors, then roast the carrots in the oven, you end up with one easy side dish that will complement any dish to the max. That extra caramelized sweetness really does make all the difference.
This terrific side dish is a fantastic choice when hosting a family gathering. You just need to combine the ingredients and roast them for an unbelievably easy and great tasting veggie side that is incredibly quick to put together. Easily double the recipe for an even larger crowd, but just make sure to use a larger pan or roaster.

Should I Peel My Carrots Before Roasting?
It’s really up to you! As long as you wash them really well to remove any dirt from them, you really don’t have to peel them. Obviously peeling them takes a bit more time but as far as taste goes, they taste the same either way.
How Long Does It Take To Roast Carrots?
It really depends on the thickness of your carrots. At 400°F, it could take anywhere from 20 to 45 minutes. Even if you cut them in chunks it could still take the same time, especially if your carrots are really big. Your carrots are cooked when they are fork tender.

My carrots are about to come out of the oven but I have a question. At the bottom of the carrots the honey mixture seems to have burnt. Not real badly but it did. Any suggestions for that?

You might try lowering the oven temp slightly, or you could keep an eye on it and maybe give the carrots a good mix halfway through to redistribute that sweet honey mixture. Another option is to add a bit of water to the pan to help prevent the burning. Hope your dinner still turns out delicious! 🥕🍯

OK I will try those things because I am going to redo this recipe until I get it right! Yes, even the tops were too burnt. The carrots were not burnt and they needed the full amount of time to cook to be tender enough. I will just plan on cooking them longer in a slower oven and give that a try. I also thought I might use nonstick aluminum foil. Or maybe even parchment paper.
