easy-lasagna-1-4

Oh hi there! I so glad you came to join me in my culinary adventures because I have a super easy recipe to share with you. If you're like me, you're probably scared to make lasagna because of all the work it takes, boil the noodles, make the sauce, assemble the lasagna and bake it. This recipe is a lot simpler and it makes for a fabulous weeknight dinner. So let me start by saying that I'm not a lasagna virgin. I've been making lasagna for a long time now and every single time, although I love … [Read more...]

Baked Spaghetti Casserole

baked spaghetti casserole-1-3

This is what I'm talking about! Loads of spaghetti smothered in ricotta cheese and sour cream, topped with meaty spaghetti sauce and baked to perfection! You were saying? Uh yes, this is the weeknight dinner you have all been waiting for! This is the dinner everyone will come to, the kids, the spouse, the neighbors, the friends. Don't worry there's enough here to go around for everyone. Here I go again making food for a dozen when there's only 2 of us. But you know what, for once this is … [Read more...]

Tripe Soup (Ciorba de Burta)

tripe-soup-1-6

I know over the years I've brought you some pretty strange recipes, but none as strange as this tripe soup. I hope you stick around and at least read this post about this recipe and hopefully I can convince you to maybe some day give it a try. But I know how you feel. I felt the same way about tripe soup, if anyone ever mentioned it to me, I'd get all grossed out. I don't think I'm helping here, am I? OK, wow 20 years ago, my first trip back to Romania, after the communism had ended, is … [Read more...]

Easy Meatloaf

favorite-meatloaf-1

This easy meatloaf recipe here is the only one you will ever need. But first of all I can't believe it's 2014 already, but I have a feeling it's going to be a great year, though not a great winter. It's been a long winter already and I try not to think about it because it literally depresses me. We have probably another good 4 to 5 months of winter left here in Calgary, and no I'm not kidding, but we have had snow in June and July here. Go figure. Why do I live here again? Oh because it's sunny … [Read more...]

Happy Thanksgiving everyone! I'm so very thankful to all my loyal readers. It's because of you that I keep this blog going. I love to read all your comments and I thank you all for all your support. Since it's not Thanksgiving in Canada, no turkey roast here, but I do have a hearty chili recipe to share with you that is just to die for! For the longest time I used to be afraid of making chili, but it's really one of the easiest recipes you can make. You basically throw everything in the pot … [Read more...]

Zucchini Lasagna

zucchini-lasagna-1

I am so excited about this recipe. Before today if you would have told me to try zucchini lasagna I might have given you a dirty look or laughed in your face. But my friend Fenne and I have decided to eat less carbs so we've been trying to come up with recipes that we love but with less carbs. So we decided on zucchini lasagna. Not only is this beautiful recipe low carb but it is also low fat. So this gorgeous lasagna is what we came up with. It has zucchini in place of noodles, a delicious … [Read more...]

I made you guys meatballs! Again! What's that? You've had enough meatballs? Can't be. These meatballs are the bomb! You're probably saying a meatball is a meatball is a meatball, but I disagree! These meatballs are not the same as any other meatballs. These meatballs will change your life. That's right! A life changing meatball. All joking aside these meatballs are pretty darn delicious. I've made quite a variety of meatballs in my day and I have to say I love them all. These meatballs though … [Read more...]

Crockpot Mongolian Beef

crockpot mongolian beef-1-3

What's the big deal with crockpots anyway? Everywhere you look you see another crockpot recipe. If you ask me, there aren't enough crockpot recipes. I resisted buying one for a long time, but now I can tell you what the big deal is about crockpots. It literally takes you 5 minutes to get all the ingredients together, dump them in the crockpot, turn it on and forget about if for a few hours during which you can do whatever you wish. Spend more time with your family, work on what matters, go visit … [Read more...]

Grown Up Mac and Cheese

grown up mac and cheese-1-6

Sorry my friends. This may not seem fair to you that I post a mac and cheese recipe in the middle of the summer, while you're all in your swimsuits, but I promise you I tried to make this a bit healthier. I did, I really did try. I used whole wheat pasta, I used extra lean ground beef, skim milk and I added green peppers, see I added veggies to this otherwise not so healthy dish. So you see, I did try, I honestly did! And this is why I call this a grown up mac and cheese, because it is a bit … [Read more...]

Mexican Tater Topped Casserole

mexican tater topped casserole-1-4

I don't make a lot of casseroles usually, mostly because it makes too much food and we don't like to eat leftovers, but I do make exceptions. This is one of them! So just think of this for a moment. Tater tots, cheese, and a ground beef mixture. It screams Mexican food! And it's impossible not to love it. It's true this casserole is irresistible, it's true this casserole is mouth watering, and it's true this casserole is cheesy, spicy, and makes you want to beg for more. That's all I have to … [Read more...]

Beef Soup (Ciorba de vacuta)

IMG_0008-3

Today I'm going to share with you my husband's favorite beef soup recipe.  This is a very Romanian soup and very traditional.  It's very easy to make, just time consuming because you need to boil the beef for 2 or 3 hours until tender. You could speed up the process by boiling the beef in a pressure cooker for 20 minutes, just make sure you save all the beef broth and add that to your soup. Beef Soup (Ciorba de vacuta)   Save Print Prep time 20 mins Cook time 3 hours Total … [Read more...]

Lahmacun or Turkish Meat Pies

turkish pies-1-4

As I'm sitting here writing this post I salivate just looking at these pictures and wish there were a couple more of these pies left. I had these for the first time years ago in Michigan from an Arabic bakery and ever since then I was hooked. I love these types of pies. Lahmacun simply means meat with dough and it's a round, very thin piece of dough, much thinner than pizza, topped with minced meat, usually beef or lamb, and vegetables and herbs. They are then baked and usually served … [Read more...]
