gnocchi with mushroom ragu-1-2

This gnocchi with mushroom ragu is a super easy dinner that's ready in under 30 minutes and perfect for any night of the week. Remember I told you I work in IT (Information Technology)? I've been a systems analyst/software developer all my life, for almost 20 years. Stop guessing my age! Would you believe it if I told you that in all that time I never used a Mac computer? Kind of hard to believe. I've always been a Windows gal. There really is something to be said about teaching old dogs new … [Read more...]

Easy Beef Lasagna

Oh hi there! I so glad you came to join me in my culinary adventures because I have a super easy recipe to share with you. If you're like me, you're probably scared to make lasagna because of all the work it takes, boil the noodles, make the sauce, assemble the lasagna and bake it. This recipe is a lot simpler and it makes for a fabulous weeknight dinner. So let me start by saying that I'm not a lasagna virgin. I've been making lasagna for a long time now and every single time, although I love … [Read more...]

Pancetta and Gruyere Breakfast Pizza

As I sit here to write this post and look at these pizza pictures I remember the first time I ever had pizza. I was about 11 or 12 years old at a restaurant in Timisoara with my family. This was when Romania used to be communist and foods like this were not common. Eating at restaurants was not a common thing for us. Back then we had rations on oil and sugar, so it was not often my mom would indulge in baking. Baking was for special occasions like the holidays. But that day was a summer day and … [Read more...]

Twice Baked Potato Slices

There's something totally delicious about these potatoes. It's called BACON. We know bacon makes everything better, and it totally does in this recipe. Not that these potatoes wouldn't be delicious on their own, aka no bacon, but bacon brings a whole new flavor dimension. To anything. Bacon is where it's at. Just remember that I am a bacon enthusiast, so bacon really does rock my world. And my dog's. Totally rocks my dog's world. So just embrace bacon. But these potato slices, my friends, are … [Read more...]

Bacon Chicken and Arugula Sandwich

So just to clarify, it's not chicken bacon, it's real pork bacon and chicken in this sandwich. Not that you couldn't use chicken bacon, but this sandwich here is the real thing. It is full of goodness! First of all, aren't you all glad it's the weekend? I am! It's been a tough week and the weekend couldn't come any sooner. Not only that, but the weather here in Calgary has been terrible. We've had more snow, because really that's what we've been missing and even today it snowed and it will … [Read more...]

Cheesy Cauliflower Breadsticks

How are you all doing? Ready for a simple recipe that's gluten free, low carb and really easy to make? I hope you are because this recipe is a winner and a keeper. I'm really excited to tell you about this recipe. I have made cauliflower pizza crust before but at that time I felt that there were maybe just too many ingredients in the crust. Baked Parmesan Tomatoes

This week has been the longest week ever. But I say that every single week. I love Fridays, hate Mondays and everything in between, blah blah blah blah blah! That's the bad news. The good news is I have a new favorite appetizer. And that's these tomatoes here! Seriously, it's my new favorite way to eat tomatoes. These baked Parmesan tomatoes are the bomb!! Strong emphasis on the word baked, hence good for you. It's almost magical when you pair together tomatoes and Parmesan cheese. I don't … [Read more...]

Easy Chicken Enchilada Casserole

Mexican food is my weakness. Totally! I love all Mexican food. I love going to Mexican restaurants and trying everything on the menu. But I also love to make Mexican food. This chicken enchilada casserole only requires 4 ingredients, so it doesn't get any easier than this. I love chicken enchiladas and this casserole is even easier to make than making regular chicken enchiladas because you just layer your ingredients. Even a kid could make this. And if you want to have some fun, have a … [Read more...]

Breakfast Turkey Stacks

Yesterday I ate some sardines, something I hardly ever eat, but my husband had opened a can of sardines so I tried some. They were not too bad, but as soon as I ate them, my face swelled up and turned red. Luckily we had benedryl in the house so I took some. Today it's better but still not completely back to normal. What the heck, I didn't even know you could have an allergy to sardines and I know I had sardines before and nothing happened. I blame this on getting old, all kinds of weird things … [Read more...]

Gnocchi with Bacon, Tomato Sauce and Mozzarella

Happy Weekend! All I want to do right now is go to bed, get under the covers and watch a chick flick. Yes I call them chick flicks, but I love them, I even make my husband watch them with me sometimes and I think he even enjoys them. He's getting soft in his old age. But it's been a hectic week and I'm tired and all I feel like doing right now is stay in bed and watch TV. Pretty exciting, eh? I still had to cook something, so here comes gnocchi with bacon, tomato sauce and mozzarella cheese, … [Read more...]

Crockpot Salsa Chicken

Have you ever gone to look at open houses that are worth millions of dollars? I did that yesterday with a friend. Well now I know how the rich live. I fell in love with this house, I saw my dream kitchen. I wish I would have brought my camera to take some pictures. I'll just have to go again, it's only 2 minutes away from me, and I'll have to take some pictures and show you guys. It was so beautifully decorated, I think that's what I liked the most. But I digress, so let me tell you about … [Read more...]
