Ok, I’ll be the first one to admit I’m not a broccoli fan. Having said that, I loved this broccoli salad, it was true love at first bite. I don’t know what makes it so good, whether it’s the garlic, or the rice vinegar, whatever it is, it’s a winner. And to top it all off, it’s good for you, so they say, and of course, super easy to make, it only took me around 20 minutes to make.
Start by cutting the broccoli, you can use the stems too if you wish, if you do cut them in quarters lengthwise. Just make sure all the broccoli pieces are fairly the same size, so they cook at the same rate.
Put the broccoli in a pot with boiling water and let it cook for about 10 to 15 minutes.
While the broccoli is cooking, you can make the wonderful dressing. Start with some minced garlic and place it in a small bowl. To it add the rice vinegar, lemon juice, and mustard. Now you can use no grain mustard, but this is all I had.
Add salt and pepper, and some chili flakes. You can add as much as you want, and if you don’t want it too spicy, you should still add a bit.
Using a whisk, whisk in a couple tablespoons of olive oil.
And that’s that for the dressing. By now the broccoli should be done. Drain it and put the broccoli in a bowl with ice water and keep it in there until it cools. After it cooled off, place the broccoli in a bowl lined with paper towels. We just want to make sure we have dry broccoli, so soak up as much of the water as you can.
Place the broccoli in a bowl and pour the dressing over it.
Toss the broccoli with dressing and make sure each piece is coated.
So you may not be a broccoli fan, like I, but this, this might just turn you into one.

- 2 tbsp lemon juice
- 4 cloves of garlic
- 1 tsp mustard
- 1/2 tsp salt
- 1/2 tsp pepper

- In the meantime, in a small bowl, add the remaining ingredients and whisk together.
- Once the broccoli is cooked place it in a bowl with ice water and let it cool off. After it's cooled, place it in a bowl lined with paper towels and let it dry.
- Remove the paper towel from the bowl and pour the dressing over the broccoli. Toss the broccoli and dressing together, so that each piece is coated.
