What a journey it’s been during this past year! I cannot even begin to express how grateful I am and I will never be able to thank you all so much for all your support and your loyalty to me over the years. Without you guys, I never would have had this opportunity, so for that I am indebted to you guys.
I freaking did it! I wrote a cookbook!! I was never much of a reader because I never had the time, so over the years the only books I’d ever buy were computer related books I’d need for my job, or cookbooks. Whenever I go into a bookstore I always always gravitate towards the cookbook section and I could spend hours there. So to finally be able to create my own cookbook and have that in stores, well that’s a dream come true! Thank you Page Street Publishing for also making this happen for me.
The cookbooks is called 30-Minute One-Pot Meals and it features 80 recipes with full page pictures. These recipes are obviously recipes that you can do from start to finish in 30 minutes or less, that includes prep time people! I divided the book into chapters like one baking pan, one saucepan, one skillet and so on. There even is a whole chapter on wok recipes, which if I might say so myself, is probably my favorite chapter.
Some recipes you can find in the book are for the following:

Spicy Shrimp and Chicken Gumbo
Sausage Mushrooms and Spinach Rice
The Big Easy Pizza Pie
Sriracha Chicken Zoodle Lo Mein
But that’s not all, the book is loaded with soup recipes, pasta recipes, stews, salads, pizzas, you name it. I really wanted this book to be your go-to book for busy weeknights, or whenever you’re in a rush.

Hello Jo. I just bought your 30-minsone-pot meals. Morroccan Chicken Couscous got rave reviews from my family 🙂 I have a question about your quick chicken and sausage stew. the kielbasa sausage—is this uncooked? cooked? should I get it from a specialty polish shop? Is this recipe kielbasa specific? I do want to make sure that I have the correct flavor when I make this.
First of all, thank you for your support. 🙂 Kielbasa is typically smoked and completely cooked, you could eat it just like that. Yes, I’d recommend getting it from a Polish store or any European store, unless your local grocery store carries it, sometimes they do.
