Chicken and Sausage Jambalaya

I came home from work and I was tired, so I was looking around the fridge for something that would be really quick and the smoked sausage jumped out at me. I decided to make a chicken and sausage jambalaya because I had one chicken breast left in the fridge as well.  So this was so simple, and I really had dinner on the stove and cooking in under 10 minutes. It turned out really delicious. Don’t let all the ingredients scare you, it’s really easy to put everything together.

Chicken and Sausage Jambalaya

Yield: 4 servings

Ingredients:

  • 1 skinless boneless chicken breast cut in small pieces
  • 1/2 lb smoked sausage cut in small pieces
  • 1/2 red or green pepper chopped
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 tbsp butter
  • 1 cup stewed tomatoes
  • 1 tbsp olive oil
  • 2 cups chicken broth (use water if you don’t have any)
  • 1 cup basmati rice
  • hot sauce of your choice and to taste
  • salt and pepper to taste
  • green onions for garnish

Instructions:

  1. Once everything has been chopped and diced, heat a large skillet with the butter and olive oil.Add the onion and chicken and saute until the chicken is white and the onion tender. Add the red/green pepper, garlic and sausage and saute for another couple minutes.
  2. Add the stewed tomatoes, rice, and broth and stir. Add the hot sauce, and salt and pepper.
  3. Bring to a boil then turn the head to a medium and let simmer until the rice is cooked, about 20 minutes.
  4. Add green onion as garnish.
