This Chicken Pesto Caprese Pasta is one delicious dinner that’s ready to put on the dinner table in under 30 minutes. Enjoyed even by your picky eaters.
Oh hi there! Fancy a quick and easy dinner? Because that’s just what I’ve got here for you tonight. This is my kind of dinner after a long and hard day at work. You can have this ready and on the dinner table in less than 30 minutes and it will please everyone, including those picky eaters.
So let’s talk pesto for a second here. You can make your own, very simple, basil, garlic, Parmesan cheese and olive oil. Or you could buy it already made, either way works here. I for one used store bought pesto here. We got some at Costco and I had a jar full of it, so it was perfect for this pasta here.
For the chicken you could use already cooked chicken breast, you know the full roasted chickens you buy from Sobey’s or Safeway? That chicken breast is perfect here, or you could make your own. Season a couple chicken breasts and lightly fry them with a little bit of olive oil in a non stick skillet and voila! Easy and delicious chicken breasts. Slice them up and serve them over this pesto pasta.
But I wanted to give this pesto pasta a little pizzaz so I thought the addition of bocconcini would be ideal with some cherry tomatoes and OMG. Flavor bomb in your mouth! And because I’m such a cheese junkie, well I just threw in some freshly shaved Parm on top and there goes one yummy dinner. ‘Nuff said!
- 2 cups dry pasta
- ¼ cup basil pesto
- 2 chicken breasts, cooked and sliced
- 1 cup cherry tomatoes, cut in half
- 1 cup small bocconcini
- Parmesan cheese (optional)
- Boil pasta according to package instructions.
- In a large bowl toss pesto and cooked pasta together so that the pasta is fully coated. Add in tomatoes and bocconcini and toss.
- Top with sliced chicken and serve with additional Parmesan cheese if preferred.
