Now this is a salad that I’ve grown up with. Â My mother used to make this all the time when she didn’t have time to make any big meals. Â So I think it’s a traditional romanian salad, although if you translate the name of it, it’s called oriental salad, not sure why. It’s a salad that you could put together in minutes and it’s delicious, healthy and it can be a main meal as well. Â As a matter of fact, I make this as a main dish all the time, it’s very filling, and you have your proteins and everything.
You’ll need to boil about 6 potatoes, that are peeled and cut in cubes.

You’ll need about half a large red onion, or one smaller one, cut in slices, julienne style.

Boil 5 eggs.

The recipe calls for about 1/2 cup of black olives, personally I love good Kalamata olives, which you can slice up or use whole. Now all you need to do is cut up the eggs in small pieces and mix all the ingredients together. Add a couple tablespoons of olive oil, salt and pepper to taste and you’ve got yourself a wonderful and delicious meal.

Ingredients:
- 6 med to large potatoes cut in cubes and boiled
- 1 small red onion chopped
- 5 eggs boiled
- 1/2 cup of black olives, sliced or whole
- 4 tbsp of olive oil
- salt and pepper to taste
Instructions:
- Peel the potatoes and cut them up in small cubes. Boil them for about 20 minutes or until they are tender when you stick a fork in them.
- Boil the eggs and cut them up in smaller pieces.
- Mix all the ingredients together gently and garnish with parsley.
