Easy Mushroom Boursin Pasta

The first time I made my Mushroom Boursin Pasta, it was one of those chilly evenings that begged for a cozy meal. Armed with a fridge that held just the right ingredients—cremini mushrooms on the edge of their prime and a tempting package of Boursin cheese—I decided it was the perfect night for a culinary experiment.

As the dish baked, the kitchen filled with the heady aromas of roasting garlic and melting herbed cheese, the kind of scents that make you hover around the oven in anticipation. The mushrooms and onions caramelized beautifully, and the cheese transformed into a creamy, dreamy sauce that clung lovingly to each noodle.

The end result was comfort in a dish, simple yet luxurious. Sitting down to that first plateful felt like a warm hug, reaffirming my love for simple ingredients coming together to create something wonderfully satisfying. Even my extremely picky husband who doesn’t like pasta, totally loved it.

What Ingredients You’ll Need

  • Mushrooms (cremini or white): I used some cremini mushrooms for their earthy flavor. You could also try using white mushrooms, portobello or shiitake. If you’re not a fan of mushrooms you can try other veggies such as zucchini, bell peppers, broccoli, cauliflower or asparagus.
  • Onion: You’ll need one onion for its sweetness. Any type of onion will work, whether it’s yellow, red, or white.
  • Fresh Spinach: This is a great dish to add in some spinach for all its great nutrients and benefits. If you’re out of spinach, arugula or kale are great alternatives.
  • Garlic Cloves: These caramelize in the oven, and they become so sweet and delicious. If you don’t have any fresh garlic, add some garlic powder.
  • Boursin Cheese (Garlic and Herbs): I love using a garlic and herbs boursin cheese because it melts into a creamy and delicious sauce. If you don’t have any, you can easily substitute with cream cheese.
  • Olive Oil: A good quality olive oil to help roast the vegetables and meld the flavors together.
  • Seasoning: I chose some salt, pepper, red pepper flakes for a bit of heat and Italian seasoning for a blend of classic herbs.
  • Farfalle Pasta: I love the way this pasta holds the sauce, but you can use any pasta you have on hand, like penne, fusilli, or rigatoni.

How To Make Mushroom Boursin Pasta

Mushroom Boursin Pasta is a wonderfully easy dish to prepare. You basically add all the ingredients to a baking dish, cook some pasta and combine everything together.

Assemble the Dish

Start by setting your oven to 350°F (175°C). Now, take a large 9×13 inch baking dish and spread the sliced mushrooms, thinly sliced onion, and whole garlic cloves evenly across the bottom. Scatter fresh spinach over the other vegetables.

Break the Boursin cheese into chunks and distribute it over the vegetables. Drizzle everything with olive oil and sprinkle with salt, pepper, red pepper flakes, and Italian seasoning to enhance the flavors.

Bake the Vegetable and Cheese Mixture

Place the baking dish in the oven and let it bake for about 30-40 minutes. You’re looking for the vegetables to become tender and the cheese to create a creamy sauce. Halfway through, give everything a gentle toss to make sure everything cooks evenly.

Cook the Pasta

While the vegetables and cheese are baking, bring a large pot of salted water to a boil. Cook the farfalle pasta according to the package instructions until al dente. Remember to reserve some pasta water before draining, as you might need it to adjust the sauce consistency later.

Combine and Finalize

Remove the baking dish from the oven after the baking time is up. Stir the contents to combine them into a creamy sauce, mashing the garlic with a fork right in the pan. Add the cooked pasta to the dish, tossing it thoroughly to coat with the creamy sauce. If the sauce seems too thick, add a splash of the reserved pasta water to reach your desired consistency.

Ingredients

  • 1 pound mushrooms (such as cremini or white, sliced)
  • 1 medium onion (thinly sliced)
  • 2 cups fresh spinach
  • 8 cloves garlic (peeled)
  • 1 package Boursin cheese (5.3 ounces, garlic and herbs)
  • 3 tablespoons olive oil
  • salt and pepper (to taste)
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon Italian seasoning
  • 1 pound farfalle pasta (or any pasta of your choice)

Instructions 

  • Preheat your oven to 350°F (175°C).
  • In a large 9×13 inch baking dish, scatter the sliced mushrooms, thinly sliced onion, garlic cloves, and fresh spinach evenly. Then, break the Boursin cheese into chunks and distribute it evenly over the vegetables.
