  1. Prep Your Strawberries: Make sure your strawberries are hulled and chopped before you start. If you’re using frozen strawberries, thaw and drain them well to prevent excess moisture in the batter.
  2. Room Temperature Ingredients: Bring your eggs to room temperature for easier mixing and a smoother batter.
  3. Coat the Strawberries: Toss the chopped strawberries in a bit of flour to prevent them from sinking to the bottom of the bread. This will help them stay evenly distributed.

Main Ingredients You’ll Need

  • Flour: I use all-purpose flour because it’s the best for this quick bread, bread flour can also be used but will result in a denser texture.
  • Baking Powder and Baking Soda: These leavening agents work together to help the bread rise. Baking powder gives an initial lift, while baking soda reacts with the acidity of the lemon zest to create a lighter texture.
  • Salt and Vanilla Extract: Salt is vital for enhancing flavors and balancing sweetness, while vanilla extract enhances the overall flavor, adding warmth and depth.
  • Strawberries: Fresh, hulled, and chopped for bursts of juicy flavor throughout the bread. You can also use frozen strawberries but make sure to thaw and drain them well.
  • Vegetable Oil: Adds moisture and richness to the bread. Use a neutral oil like canola or sunflower oil. You can substitute with melted butter for a richer flavor and denser texture.
  • Eggs: Bind the ingredients together and add richness. They should be at room temperature to ensure they mix more evenly with the other ingredients and help the batter rise better.
  • Granulated Sugar: If you like your bread less sweet, you can reduce the amount of sugar.  You can also experiment with substituting part of it with brown sugar for a deeper flavor.

How To Make Strawberry Bread

Preheat and Prep

Preheat to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper. Tip: This ensures the bread doesn’t stick and makes it easy to remove from the pan.

Combine Dry Ingredients

In a large bowl, sift together 2 cups of all-purpose flour, 2 teaspoons of baking powder, ½ teaspoon of baking soda, and ½ teaspoon of salt.Tip: Sifting helps to aerate the flour, making the bread lighter.

Mix Wet Ingredients

In a separate bowl, whisk together ¾ cup of vegetable oil, 2 large eggs, 1 cup of granulated sugar, the zest of 1 lemon, and 1 teaspoon of vanilla extract until well combined. Tip: Room temperature eggs mix more evenly, resulting in a smoother batter.

Combine Wet and Dry Mixtures

Gently fold the wet ingredients into the dry ingredients just until the flour is moistened.Tip: Avoid overmixing to keep the bread light and fluffy. Overmixing can result in a tough, dense loaf.

Add Strawberries and Nuts

First, toss 1½ cups of hulled and chopped strawberries in a small amount of flour. Now, fold in the flour-coated strawberries and ½ cup of chopped pecans or walnuts until evenly distributed.
Tip: The flour coating helps them stay suspended throughout the batter and not sink to the bottom.

Fill the Pan and Bake

Pour the batter into the prepared loaf pan and smooth the top with a spatula. Place in the preheated oven and bake for about 1 hour, or until a toothpick inserted into the center of the bread comes out clean. Tip: This ensures the bread is fully cooked inside.

Cool and Serve

Allow the bread to cool in the pan on a wire rack for 10 minutes. Then, turn out the loaf and let it cool completely on the rack. I like to drizzle mine with a little bit of icing or strawberry syrup before slicing and serving. Tip: Cooling the bread helps it set and makes slicing easier.
