How about we continue with some great salads here, to get us ready for the summer. This salad is so delicious and so refreshing. It has no olive oil or fatty dressings, the only dressing is lime juice, making this salad super healthy. I have to say, this salad was a great surprise, I didn’t think it would turn out so delicious, but it did. I found the recipe in a book I’ve had for a long time called Make It In Minutes, and I’ve never made it before. Â So I was pleasantly surprised. I hope you’ll enjoy it as well if you try it.
Start by draining a can (30 oz) of black beans and rinsing them off. Place them in a large bowl.

Drain and rinse a can of corn and add it to the bowl.

Next chop an avocado in small pieces.

Chop 3 large tomatoes in small pieces.

Next you’ll need 1 jalapeño pepper minced. Now you may think this may make it spicy but really it didn’t, but of course, you can omit this step.

Next you’ll need to add the zest of a lime, and juice from two limes.

Next we need to add about 1/4 cup  of chopped cilantro. I was never a big fan of cilantro, but I must say it’s growing on me, and in this salad it was extraordinary.

Toss everything together. Add a bit of salt and toss it some more. This salad is amazing, very very refreshing.

Next what I did is took two tortillas, cut them in strips and fried them in a bit of olive oil until they were brown. Add these to your salad and it just gives the salad a bit of crunch, it’s just yummy.

Ingredients:
- 1 can (30oz) of black beans
- 1 can (19oz) of corn kernels
- 3 large tomatoes chopped
- 1 avocado chopped
- 1 jalapeno minced
- zest from one lime
- juice from 2 limes
- 1/4 cup of chopped cilantro
- 2 tortillas sliced in thin strips and fried in 1 tbsp of olive oil (optional)
Instructions:
- Rinse and drain the black beans and add them to a large bowl. Drain the corn kernels and add them to the bowl.
- Chop the avocado, tomatoes and jalapeño and add to the bowl.
- Add the lime zest and lime juice, salt and pepper and mix everything well together.
- Serve with some crisp tortilla chips.

do you know how long this lasts in the fridge?? If I were to make a batch for my boyfriend and I for the week would it stay well for multiple lunches?? Sounds delicious and easy!

Hmm, never made this to last for a few days, I would imagine the avocado would get brown, so you could try it and just not add the avocado until that day.
