Here’s yet another salad! This salad, however, is my husband’s idea and his recipe and the best part is that he made it. I can’t complain when he cooks, because I love it, especially after a long day at work! This salad to me is the picture of health. Spinach, strawberries, tomatoes and red peppers. Super healthy recipe. One of my favorite salads ever.
I promise my next post won’t be about salads and I’ll do some cookies or something. But I’ve been wanting to try all different sort of salads, especially during the summer so we could take advantage of the nice and fresh produce out there.
For this spinach salad you’ll obviously need some fresh spinach, wash it well and let it dry. You can use a salad spinner for better results, I just bought this one: OXO Good Grips Salad SpinnerSalad Spinners) and I love it.
You’ll need about a cup of fresh strawberries cut in small pieces.
Next come the tomatoes, I keep saying I love these cocktail tomatoes, they are so sweet and delicious. Of course you can use whatever tomatoes you prefer.
And last but not least, you’ll need a red pepper, cut in long strips.
That’s it for the simple fresh ingredients. To make the dressing, you just have to whisk the mustard, salt, pepper, red wine vinegar, lemon juice, orange juice, sugar and olive oil together. We put quite a bit of pepper in this dressing, which made me sneeze, but feel free to add as much as you want.
In a large bowl, add the spinach, strawberries, tomatoes and peppers and mix them. Before serving, pour the dressing over the salad and toss. And that’s all there is to this delicious and healthy salad.
Fresh Spinach and Strawberry SaladPrint Pin Rate
- 1/2 lb fresh spinach washed
- 5 cocktail tomatoes cut in quarters
- 1 red bell pepper cut in thin slices
- 1 cup of strawberries cut in small pieces
- 1 1/2 tsp Dijon mustard
- 1/2 tsp salt
- 1 tsp pepper
- 2 tbsp red wine vinegar
- 1 tsp lemon juice
- 1 tbsp orange juice
- 1 tsp sugar
- 3 tbsp olive oil
- In a large bowl mix the spinach, strawberries, tomatoes and red pepper.
- To make the dressing, whisk together the remaining ingredients in a small bowl.
- Before serving pour the dressing over the salad and whisk.
