Why You’ll Love These Banana Fritters
- Easy Sweet Treat! If you’ve got a few bananas and basic pantry ingredients you’ve got what you need to make this banana fritters recipe. No fancy ingredients, equipment, or skills are needed.
- Yummy Fried Banana! Perfectly brown and crispy on the outside and soft banana yumminess on the inside, these fritters are fantastic and even better with a scoop of vanilla ice cream.
- Make Ahead Dessert! Fritters keep in the freezer for up to 3 months! All you have to do is pop them in the oven to warm and then dust them with powdered sugar right before serving.
- Bananas – Any kind of bananas will do, just be sure they are super ripe with a dark peel to get that proper flavor.
- Milk – Any kind of milk is A-okay.
- Flour – I used all purpose today, something that will hold up to our frying.
- Sugar – White sugar and a little icing sugar as garnish.
- Leavening Agents – Both baking soda and baking powder are needed to get all the volume and tenderness we’re looking for.
- Salt – All sweet treats need a little help from salt!
- Vegetable Oil – We need something neutral in flavor and that can hold up to frying, like canola oil.
Once you make homemade fritters, you’ll wonder why it took you so long to try! It’s quite easy to do and takes very little effort. Just be sure to follow these steps and your fritters will turn out perfect.
To begin, you need to mash the ripe bananas in a large bowl. Using a fork or potato masher is the easiest way to get the job done. Then add the milk to the bowl and mix it together with the mashed bananas until smooth.
Now, in a separate bowl combine the flour, sugar, baking powder, baking soda, and salt. You want to make sure the dry ingredients are mixed together fairly well so that the leavening agents are equally distributed. Then add the flour mixture to the banana mixture and fold them together with a wooden spoon until well combined.
Once the batter is made, heat some oil in a deep fryer or heavy bottomed pan to 350°F (177°C). If using a pan, something like a Dutch oven works well. Also, it is crucial that you keep an eye on the temperature for safety reasons. You can do this by using a digital cooking thermometer or candy thermometer. If at some point, the oil gets too hot you need to turn the heat down or off immediately. It’s much safer to heat it back up.
While the oil is heating, line a sheet pan or plate with paper towels to place fritters to drain once they have been fried.
Once the oil is at the proper temperature, you can start frying some fritters! To do this, drop spoonfuls of the batter into the hot oil and fry them for about 5 minutes turning them once. You can also use a small cookie scoop or ice cream scoop for this step. Then once the fritters are browned and done, remove them from the hot oil with a slotted spoon and place them on the paper towel-lined plate to drain.
After all the banana fritters have been fried, dust them with some powdered sugar and serve them immediately to enjoy. And if you want to jazz them up a bit more, they are amazingly good with a sprinkle of cinnamon and then served with a side of honey or maple syrup for dipping.
Can I Bake Them?
Yes! To bake, distribute the batter in a mini muffin pan sprayed with nonstick cooking spray. Then bake the fritters at 350°F (177°C) for about 12 to 14 minutes until they are golden brown on top. But keep in mind that they will still be delicious but will turn out more like muffins.
What’s The Difference Between A Fritter And A Donut?
While these two deep-fried desserts are very similar they aren’t quite the same. A donut is just a deep-dried piece of dough that is then served as is or filled after it’s cooked with jam or custard. Whereas, a fritter is food that is mixed with batter, such as bananas in this case, and then deep fried. Fritters unlike donuts are not filled after they are cooked.
Expert Tips
- Be sure the oil is nice and hot at 350°F (177°C), otherwise the fritters will soak up too much oil.
- You can use a small cookie scoop to spoon the batter into the oil if it’s easier for you.
- This recipe will make around 12 – 15 fritters so you may have to share.
- This dish can only be frozen before being fried, so be sure to cook fresh. The batter will last up to 2 weeks in an airtight container.
Storage
Fridge
You can store leftover fritters in an airtight container or sealed bag in the fridge for up to 4 days. To reheat, put them on a sheet pan in the oven at 350°F (177°C) for about 3 to 5 minutes or until hot.
Freezer
Once they are totally cooled off, these banana fritters can also be stored in the freezer for up to 3 months. Just put them in a sealed bag or airtight container. Then to reheat from frozen, place them on a sheet pan in the oven for about 10 to 12 minutes at 350°F (177°C).

Will very ripe frozen and defrosted bananas work?
Yes, they should be perfect.
I tried this recipe today and I wanted to share that it turned out great. Thank you! I’ve been searching for the perfect banana fritter recipe and I think I found it! I used 3 bananas and added 1 Tsp of Vanilla. Also I did not deep fry them but made them in an ebelskiver pan using ghee. They were so good!
I would love to try this recipe, because it sounds so delicious. I’d like to know if it’s possible to cook these in an air fryer.
I don’t think it will work as well, since it’s a wet batter and they might flatten a bit instead of being nice and round. It might also make a mess of your air fryer.
I think it could be made in an air fryer. Place ur mixture in silicone muffin cups and air fry. I tried it and it works great. I even used paper muffin cups but the paper did get crispy but not burned so it also was fine. Enjoy.
I am planning on making this tonight. Is there a way to make these smaller so I can make more? I don’t want to have to use eight banana’s but am making this a dessert for work
Sure, I mean they’re pretty small already, but if you make them smaller just make sure you watch them as they fry pretty quickly.
Wow Wow Wow I’ve been wanting to make these for months , what a quick and simple method and the taste – out of this world. A tablespoon is easiest as you don’t want them too big. What a taste and so quick to do(with difficulty turning if the mixture is too light) two mins each side with the recommended temp in my deep fryer. Try with ice cream and dribble with melted chocolate
So-so recipe. Always a treat, I’ve made several varieties of banana fritters before. Usually the recipe has either bananas that are sliced, and then battered and fried, or mashed bananas that have the flour mixture added and are then fried. I found this mashed banana version absorbed a lot of oil while cooking and even with careful monitoring of the temperature, the perfectly browned fritters were woefully undercooked inside. I added a bit more flour to the mix, but still had uncooked batter inside the crispy fritters. Overall, the final product was somewhat disappointing. I did cook the fritters for exactly 5 minutes, as per the instructions. Next time I will try a sliced banana recipe instead.
I made this tonight. We bought some red bananas out of curiosity, I wasn’t a fan of it raw. So I googled recipes and I found this one! I did alter it a bit. I used 3/4 cup self rising flour, 1/4 cup flax meal, and added in a cup of mini chocolate morsels. Very yummy with a cup of cold milk!
If using as a sambal for curries this recipe could be excellent if using Plantain instead of banana?
This recipe is perfect to use up all the bananas I have sitting on the counter! Thanks for sharing!
Absolutely!
Can you use regular bananas as my stores do not carry red ones
Absolutely!
These look delicious and fluffy! I’m so used to seeing soggy ones of these. I love how the banana is mashed up in these. Thank you for sharing this recipe.
My pleasure, hope you try them!
Wow, these were great, we really enjoyed them 🙂
Have tried this recipe. Just wait for the outcome
I love Thai Banana Fritters but as you say these are more of a doughnut. I’d love to try these soon.
I often just eyeball recipes, it’s just my way. However, I then have to measure it out for blogging LOL.
Exactly! You’d love these, they’re so yummy!
I can’t remember the last time I had banana fritters but I do remember how good they taste. I just want to grab one of yours right off the computer screen and start eating!
