This classic Chicken A La King is rich, creamy, and made from scratch with simple ingredients! Using only one pot and just 30 minutes of your time, you can have this delicious comfort food dish ready to serve.

I love a good one pot meal, even better if it takes only 30 minutes! This recipe ticks both of those boxes. Chicken A La King is a rich, creamy, comfort food staple in my books! Tender chicken and mushrooms, enveloped in a luscious cream sauce spiked with peas and pimento peppers. This dish is perfect for a busy weeknight! Simple, satisfying, and extremely flavorful.

This dish is reminiscent to a crustless chicken pot pie, and I am all for that kind of comfort! Made with simple ingredients, this creamy chicken dish is super easy to throw together and takes 30 minutes from start to finish! What more could you want in a meal?

Ingredient Notes

  • Butter – I used unsalted to control the sodium content!
  • Mushrooms – Mushrooms are a staple in chicken a la king! I used white mushrooms, cleaned and sliced. You can also use cremini mushrooms.
  • Onion – White or yellow will work! An essential flavor enhancer in our dish.
  • Chicken Bouillon – This is a flavor enhancer, which includes ingredients such as carrots, onions, parsley and garlic to deliver deliciously authentic flavor in every dish.
  • Flour – Just plain old all purpose will do the trick! This is going to help thicken up our sauce.
  • Chicken Broth – I always opt for low sodium – you can make your own using my recipe as well!
  • Milk – Use your preference! Any dairy or non dairy alternative will work.
  • Peas – I used frozen peas to save time, you are more than welcome to use fresh or canned.
  • Pimentos – Chopped. A pimento is a variety of large, red, heart-shaped chili pepper, this will add a little kick to our dish!
  • Chicken – Cooked chicken, chopped.

How To Make Chicken A La King

  1. Cook Ingredients: Melt the butter in a large skillet over medium-high heat. Add the onion, mushrooms and cook for 5 minutes or until the onion is softened. Next, add the salt, pepper, chicken bouillon and stir.
  2. Add Ingredients: Sprinkle the flour over the mushrooms, stir and cook until there’s no more specs of white flour. Add the chicken broth, milk, and stir. Lower the heat to medium-low and continue stirring and cooking for another 5 minutes until sauce thickens, ensuring there are no lumps.
  3. Cook: Stir in the peas, pimentos, cooked chicken and cook for another 5 minutes or until the chicken is heated through and the sauce is bubbly.
  4. Finish and Serve: Garnish with parsley and serve over rice, noodles or toast.

What Is Chicken A La King?

Chicken à la King is a dish consisting of diced chicken in a creamy sauce, with mushrooms and vegetables!

What Does “A La King” Mean?

A la king describes a dish (usually meat) diced and served in a cream sauce containing mushrooms, pimiento, or green pepper.

How to Serve

You can serve this chicken a la king as is, but this easy dinner recipe is great served over rice, pasta, toast, or biscuits!

What Can I Add To This Dish?

Feel free to add your favorite veggies or spices into this dish! Green peppers, leeks, celery, broccoli, etc.

Can I Make This In Advance?

Yes! Let it cool completely, then freeze individual servings of the chicken a la king in freezer-safe, resealable plastic storage bags or an airtight container. This will last in the freezer for up to 1 month! If using freezer bags, seal them with as much air out of them as possible.

Tips

  1. Use a store bought rotisserie chicken to save time or make your own roast chicken!
  2. Replace the chicken with tuna for a seafood version.
  3. This is also a great recipe to use up any leftover turkey you have from the holidays!

Storing Leftovers

Store leftover chicken a la king in an airtight container in the fridge for up to 4 days.

Freezing

You can freeze chicken a la king, but in my opinion, it is better if you eat it fresh! If you still want to freeze this dish, wait until it has fully cooled, then transfer to an airtight container. This dish can be kept frozen for up to 1 month.

Ingredients

  • ½ cup butter unsalted, (1 stick)
  • 1 large onion chopped
  • 8 ounce white mushrooms cleaned and sliced
  • ½ teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste
  • 1 cube chicken bouillon
  • ½ cup all-purpose flour
  • 2 cups chicken broth low sodium
  • 1 cup milk
  • 1 cup frozen peas
  • 1 cup pimentos chopped
  • 3 cups cooked chicken chopped
  • 1 tablespoon parsley for garnish

    I looooved this! I made it last night and it was delicious! The only issue I had was with the flour not dissolving completely. Any tips on how to make sure there aren’t any lumps?

      Hi Arianne! Glad you liked it! My only tip is to whisk away after you add the flour, keep on whisking until the sauce is smooth. 🙂

    Made this for my daughter and husband (I don’t eat meat) accompanied by some home made biscuits. Also made for a friend whose husband is in hospital, as it is a very comforting dish. My daughter doesn’t like mushrooms, so I left them out and added some carrots with the peas. It was so easy to put together. Thanks for another great recipe!

      There is no specified serving size, the recipe assumes 6 servings, so the nutritional info is based on that. 🙂
