This dish is reminiscent to a crustless chicken pot pie, and I am all for that kind of comfort! Made with simple ingredients, this creamy chicken dish is super easy to throw together and takes 30 minutes from start to finish! What more could you want in a meal?
Ingredient Notes
- Butter – I used unsalted to control the sodium content!
- Mushrooms – Mushrooms are a staple in chicken a la king! I used white mushrooms, cleaned and sliced. You can also use cremini mushrooms.
- Onion – White or yellow will work! An essential flavor enhancer in our dish.
- Chicken Bouillon – This is a flavor enhancer, which includes ingredients such as carrots, onions, parsley and garlic to deliver deliciously authentic flavor in every dish.
- Flour – Just plain old all purpose will do the trick! This is going to help thicken up our sauce.
- Chicken Broth – I always opt for low sodium – you can make your own using my recipe as well!
- Milk – Use your preference! Any dairy or non dairy alternative will work.
- Peas – I used frozen peas to save time, you are more than welcome to use fresh or canned.
- Pimentos – Chopped. A pimento is a variety of large, red, heart-shaped chili pepper, this will add a little kick to our dish!
- Chicken – Cooked chicken, chopped.
How To Make Chicken A La King
- Cook Ingredients: Melt the butter in a large skillet over medium-high heat. Add the onion, mushrooms and cook for 5 minutes or until the onion is softened. Next, add the salt, pepper, chicken bouillon and stir.
- Add Ingredients: Sprinkle the flour over the mushrooms, stir and cook until there’s no more specs of white flour. Add the chicken broth, milk, and stir. Lower the heat to medium-low and continue stirring and cooking for another 5 minutes until sauce thickens, ensuring there are no lumps.
- Cook: Stir in the peas, pimentos, cooked chicken and cook for another 5 minutes or until the chicken is heated through and the sauce is bubbly.
- Finish and Serve: Garnish with parsley and serve over rice, noodles or toast.

I used canned chicken,and used the liquid from the cans in lieu of some of the water. I also used Better Than Bouillon Chicken for the bouillon cube and for the broth. I added and cooked the flour in the butter as a roux before adding any liquids. Overall, it was wonderful! Served over rice, it was exactly what I remembered from childhood in the 1950’s. This was great! My fifteen year old daughter made it by herself and it was fantastic and easy. The only change she made is making it dairy free due to an allergy by using soy milk and dairy free butter. It came out perfect and she served it over rice.

Made this for my daughter and husband (I don’t eat meat) accompanied by some home made biscuits. Also made for a friend whose husband is in hospital, as it is a very comforting dish. My daughter doesn’t like mushrooms, so I left them out and added some carrots with the peas. It was so easy to put together. Thanks for another great recipe!
