Peanut Butter and Bacon Cookies

 Peanut Butter and Bacon Cookies, the perfect combination. You won’t know until you try them yourself!

OK, before you call me crazy, take a moment and read this. I would not steer you wrong. These peanut butter and bacon cookies are going to be the best peanut butter cookies you ever ate. Trust me on this one! Take a moment and think about this, how can anything with bacon in it be bad. And pair that off with peanut butter and you’ve got a winner. If you don’t like peanut butter and bacon, then do not read any further, otherwise, please join me in this wonderful discovery.

The brown sugar caramelizes the bacon and the bacon turns into this sweet crunchy salty goodness. It’s heaven in your mouth, it’s love at first bite.

OK, if I haven’t convinced you until now, I give up, but if I have convinced you here’s how you make these wonderful, heavenly cookies.

You will need to first fry the bacon, about 6 nice pieces of bacon. See if you can fry only 6 pieces of bacon. Between the dog and the husband, it’s mission impossible.

 To the bowl of your mixer, add the brown sugar and white sugar. Next add a cup of nice and creamy peanut butter.

Mix the peanut butter with the sugars for about 2 minutes, until it forms this golden goodness. Add the egg and the baking soda and mix again for 2 more minutes.

While that’s mixing, dice up the bacon, into tiny little morsels of pleasure. Then add the bacon to the mixing bowl and mix it in with a spatula.

Now stop drooling over there. This is the most critical time right now, you really have to restrain yourself from eating the cookie dough. Just say to yourself…I can do this! I can do this, a few more minutes and I can eat them! If you make it past this step, just take a tablespoon of the dough and roll it between your hands. You should end up with about 15 balls. To make these cookies even better, roll them in some sugar.

Using a fork, create a criss cross pattern.

Bake these babies in a preheated oven at 350 F degrees for 10 minutes then cool on a wire rack. Now take a deep breath, then take a bite and enjoy the symphony.

Just in case you think I forgot about weight watchers, you’re wrong, these delicious babies are 4 points per cookie, so make it count.

Ingredients

  • 1 cup peanut butter (smooth)
  • 1/2 cup brown sugar (packed)
  • 1/2 cup sugar (granulated)
  • 1 egg
  • 1 teaspoon baking soda
  • 6 slices bacon (fried and diced)

Instructions 

  • Preheat oven to 350 F degrees.
  • In the bowl of your mixer, add the brown sugar, white sugar and peanut butter. Mix this for 2 minutes then add the egg and baking soda. Mix for another 2 minutes.
  • Add the bacon and mix the bacon in using a spatula.
  • Roll out pieces between your hands. You should end up with about 15 balls. To make these cookies even better, roll them in some sugar.
  • Using a fork, create a criss cross pattern.
  • Bake for 10 minutes then cool on a wire rack.

It was good but I would add a little more bacon (3 more pieces – thick cut) and the cookies fall apart. It needs something more to bind them. I also added chocolate chips to a batch and those turned out well but still had the falling apart problem.

We just made a batch ,I think the flavor s are awesome .A little crumblely until cool.
Thanks well be using this recipe again. By the way we used Applewood beacon.

Great flavors! I must have made my cookies smaller because I got two full dozen. These are the exception in that they taste better after they have cooled. I ate warm one and the bacon flavor is kind of lost in the PB when still warm. And the texture of the bacon is better when they have cooled also.

The brand of peanut butter you use can make a difference! All that matters, though, it that they turn out delicious in the end.

This looks delicious! I’ve been mulling over what deliciousness I want to make to take to a Superbowl party, and I think I’ve got it now! Does the recipe double well? Also, I love that you included the WW Points per cookie… now I know I can only eat ONE 🙂 Thanks, Jo!

just baked these tonight and tasted amazing! what’s not to love? peanut butter, bacon, cookies… mMmm!
however the criss-cross shape didnt come out after baking. is there any reason? should i have put them in the fridge prior to baking?

Yes they are very good, crazy combination. Not sure why the criss-cross didn’t come out, I did not put mine in the fridge before baking. It’s strange because I made this twice and I didn’t have any issues. Well as long as they taste good.

Hey Jo,
When you say you put yours in the fridge, when exactly did you put them in the fridge? After they were already rolled out in some sugar and forked? or the dough after it was completed before you started rolling them out? Also, which sugar did you dip it in, both, or one over the other?
