Air Fryer Roasted Brussels Sprouts Recipe
These Brussels sprouts are the perfect healthy side dish, and now are made even healthier because they’re roasted in the air fryer. While Brussels sprouts may not be the first veggie you think of when looking for a quick side, I urge you to reconsider this recipe. They’re perfectly crispy, perfectly dressed with a sweet balsamic vinaigrette, and really easy to make.
While Brussels sprouts are the perfect side dish for holiday dinners like Thanksgiving or Christmas, they are also great for weeknights because they’re quick and easy to make. You will love them!

- Brussels Sprouts – You’ll want some nice fresh Brussels sprouts, cut in half so they cook faster. You can use frozen Brussels sprouts but they may not get as crispy.
- Balsamic Vinegar – Use a good quality balsamic vinegar.
- Soy Sauce – I always opt for a low sodium soy sauce to reduce the sodium content in the dish.
- Brown Sugar – A little bit of brown sugar for sweetness and to add that caramel flavor to our sprouts.
- Olive Oil – Use a good quality olive oil. Regular olive oil or extra virgin olive oil will work.
- Spices and Herbs – Some ground ginger and black pepper is all you need. Feel free to switch up the ginger with garlic powder instead. We also need some fresh parsley to garnish our sprouts, if preferred. Notice I don’t add any salt because you’ll get plenty of saltiness from the soy sauce.
- Prep the Brussels sprouts. In a medium bowl, toss together the Brussels sprouts with the olive oil and 2 tablespoons of water.
- Air fry the Brussels sprouts. Transfer the Brussels sprouts to the air fryer basket and air fry at 350°F for 20-22 minutes or until fork tender and browned. Half way through the cook time, shake the air fryer basket to toss the sprouts around.
- Make the vinaigrette. In a small saucepan, combine the soy sauce, balsamic vinegar, brown sugar, ginger and pepper. Cook over medium-low heat for about 5 to 10 minutes or until the sauce reduces by half and thickens.
- Toss sprouts with vinaigrette and serve. Pour the dressing over the cooked Brussels sprouts and toss well. Garnish with parsley and serve.
Why Won’t My Brussels Sprouts Get Crispy?
Usually the reason for this is because you overcrowded the air fryer basket with Brussels sprouts. If not all sprouts fit in a single layer, it’s best to cook them in a couple batches to ensure they get adequately crispy and browned.
Why Do My Brussels Sprouts Taste Bitter?
Brussels sprouts release glucosinolate compounds and thiocyanates during the cooking process which cause that bitter taste. To avoid this or to reduce the bitter taste, it helps to cut the sprouts in half before cooking them. Also the delicious balsamic vinaigrette should help flavor our sprouts nicely.

- The cooking time can vary based on the size of the Brussels sprouts. If your sprouts are smaller they will take less time than the 20 minutes suggested in the recipe.
- Don’t overcrowd the Brussels sprouts in the air fryer basket as they will not get crispy. If they don’t all fit, you will have to do this in a couple batches.

How To Store Leftovers

The Brussels sprouts don’t freeze well once cooked so if you’d like to store them in the freezer, freeze them raw and follow this recipe once the veggies have thawed.
