Cajun Shrimp Tacos with Mango Salsa – the easiest and most delicious shrimp tacos with a super easy, fresh and delicious mango salsa. So satisfying, and so fresh!
Happy Sunday!! Love love love my Sundays, especially when the weather cooperates! And I have a super simple and amazing recipe for you on this glorious day and that is these great cajun shrimp tacos with a fabulous mango salsa. Just made this and we had it for lunch and let me just say that as I was taking pictures my husband ate the rest of the shrimp and salsa and by the time I realized what he was doing it was almost too late. So yeah, good stuff!
Not only was hubs stuffing his face while mumbling that he wants to eat like this every day, but here’s my dog Mia watching him as he keeps on eating. Poor thing, we could not give her any shrimp because of the spiciness, but don’t worry she got her share of her own good food. But isn’t that the most adorable face you’ve ever seen?
For the shrimp I used a store bought cajun seasoning, but you could use taco seasoning if you want, or just lemon and butter. I cooked them in a skillet with a little bit of butter which I heated really well before adding the shrimp to the skillet. You have to watch them because they cook fairly quickly and I cooked them on high because I wanted them to get a bit of color. When they were done cooking I squeezed half a lemon over them and added some cilantro. That’s all there is to the shrimp, simple and simply mouthwatering.
But let’s talk about this mango salsa because it’s the best thing about these tacos. There’s something about sweet and spicy salsas that I just can’t get enough of. Ripe mangoes, cherry tomatoes, jalapeno pepper, cilantro, some green onions and lime juice. That’s pretty much all you need for this stunning salsa. You’ll want to just eat this out of a bowl, which is what hubs did, but seriously, it’s the best salsa ever.
To my tacos I also added some cole slaw mix as base but you can skip that if you want. But really that’s all there is to these puppies and they are so perfect. So if you’re celebrating Cinco de Mayo today then by all means, make these. You need these tacos in your life.

Cajun Shrimp Tacos with Mango Salsa
For Cajun Shrimp
- 1 lb large shrimp shells removed
- 1 tbsp butter
- 2 tbsp cajun seasoning or to taste
- juice from half a lemon
For Mango Salsa
- 1 mango peeled and chopped
- 1 cup cherry tomatoes chopped
- juice from 1 lime
- 4 green onions chopped
- 1 jalapeno seeded and chopped
- 1/2 cup cilantro chopped
- salt and pepper to taste
- 8 6" corn tortillas
- 1 cup coleslaw mix
- To prepare the salsa toss all the mango salsa ingredients in a bowl and set aside until ready to assemble tacos.
- In a large skillet melt the butter on high heat. Season shrimp with cajun seasoning and add shrimp to skillet. Cook until pink, shouldn't take more than a couple minutes. Turn off heat and squeeze half a lemon over the shrimp.
- To assemble tacos, start with coleslaw mix, shrimp then salsa.
