Cherry Cobbler for Two

I love cherries! Have I said that before? I probably have, many times in fact. Well since I’ve been making salads almost every day this week, I decided it was time for some dessert, so what better way to celebrate, then with a gorgeous cherry cobbler. Not that there’s any special reason to celebrate, but we don’t need a special occasion to enjoy a beautiful cherry cobbler, do we?

Since it’s just my husband and I, I didn’t want to make a huge cherry cobbler and ok I’ll admit the truth, I really wanted to use my gorgeous ramekins. Aren’t they adorable, and one of those makes the perfect cobbler size for a person. This cherry cobbler was so good it’s making my favorites list, and it was very easy to make as well.

Start by preheating your oven to 400 F degrees. You’ll need about 2 cups of cherries pitted. Recently I discovered a great OXO Good Grips Cherry PitterPitters), that I’ve been using a lot to pit cherries and olives. I just love it. So pit the cherries, and wash them.

Add 2 tablespoons of sugar, dash of salt and 1 tablespoon of lemon juice to the cherries and mix well.

Set aside the cherries and get a medium size bowl and add the flour, sugar, salt, baking powder, milk and butter. Using a fork mix everything together.

This is why I love this cherry cobbler, so simple to put together. Now normally you’d have to butter the ramekins, but I forgot to do that, however, nothing stuck so that was great, less calories for me. Anyway, add half the cherries to each “buttered” ramekin.

Oh this makes me so happy, they are so beautiful. Now add the crumble on top of each ramekin.

And that’s that! All you have to do now is bake it for about 30 minutes, or until nice and golden. I lied, there’s one more thing left to do and that is to enjoy this delicious cherry cobbler with your significant other. It will make you very happy, both of you!

Cherry Cobbler for Two

Ingredients:

    Cherry filling
  • 2 cups of pitted cherries
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • dash of salt
  • Dough
  • 1 cup all purpose flour
  • 1 tsp sugar
  • dash of salt
  • 1/2 tbsp baking powder
  • 1/4 cup melted butter
  • 1/4 cup milk

Instructions:

  1. Preheat oven to 400 F degrees.
  2. Pit the cherries and wash them. Add the 2 tbsp of sugar, lemon juice and a dash of salt to the cherries and mix well. Set aside.
  3. In a medium bowl add the remaining ingredients and mix well with a fork. Dough will be crumbly.
  4. Butter two ramekins (4″ in diameter). Pour half the cherries in each. Add the crumbled dough on top of the cherries.
  5. Bake for 30 minutes or until the top is golden.

  1. I just made this. I doubled everything as I had a lot of cherries. But I came out absolutely amazing! I did add brown sugar to both the cherries and crumb topping
