Halloween Vanilla Cupcakes
Today I was in the baking mood, and since it’s Saturday, I baked a lot. One of the things I baked are these Halloween Vanilla Cupcakes.
I don’t normally make cupcakes, or cakes for that matter, unless there’s a special occasion, but I just couldn’t help myself now. I had to make something cute for Halloween. So as I’m watching cup cake wars, I thought what a wonderful idea, to make some adorable cupcakes. I could have gone with chocolate cupcakes, but I thought vanilla cupcakes and orange icing would go together really well. I’m happy with the way they turned out, I think they look adorable.
The cupcakes are very make. Start by whisking together the flour, sugar, baking powder and salt in a large bowl. Using your mixer on low speed, add the flour mixture, mix in the butter, sour cream, eggs and vanilla. When it’s all incorporated, beat on high until smooth, for about 2 minutes.

Next, line your muffin tray with cupcake liners. Fortunately, I had these Halloween liners.

Fill the cups with the cupcake batter three quarters of the way through.

Bake the cupcakes in a preheated oven at 375 F degrees for about 18 minutes or until done.

While the cupcakes are baking you can make the frosting. Frosting is really simple to make, and I decided to make a cream cheese frosting, so I used butter, cream cheese, powdered sugar, and vanilla extract. I also used orange food coloring to make the icing orange. Let the cupcakes cook completely before putting frosting on them, so in the meantime store it in the refrigerator. When the cupcakes are done, just pipe the frosting over the cupcakes and then all that’s left to do is to take a big bite.

- 4 cups powdered sugar
- 1/2 cup cream cheese
- 1/2 tsp vanilla extract
- a few drops of orange dye
Directions:

- Bake the cupcakes in the oven for about 18 minutes or until done.
- While the cupcakes are baking, in the bowl of your mixer add all the frosting ingredients and beat for a few minutes.
- Let the cupcakes cool completely on a wire rack before piping the frosting on them.
