Cauliflower poppers – they make a great side dish or snack, and they’re good for you.

It’s a crazy week this week. I’m conducting training this week, something which I don’t normally enjoy, being the introvert that I am, however I have to say this week I am enjoying it a bit. Something different than my normal day to day work activities. The part that I’m enjoying is chatting with people all day long, versus being in my office all day long programming. The part I don’t enjoy so much is that whenever I train I get really tired and I feel that when I come home I’m like a zombie. So on days likes this I don’t want to cook anything extravagant for dinner.

Having said all that, these cauliflower poppers couldn’t get any easier to make. So I have to tell you the benefits of cauliflower because they are super great. As you can guess, cauliflower is low in fat, low in carbohydrates, but high in fiber and vitamin C, which is good for you. Cauliflower also releases a compound called sulfuraphane as you chew it or chop it, which may protect against cancer. Are you as impressed as I am? How wonderful is that!

Now I have one more benefit for you if you are on weight watchers, 0 points! That’s right, you can eat the entire thing for 0 points!

The recipe is very simple as well, I did not use any oils or cooking sprays because I baked the cauliflower on a baking sheet lined with a silpat. So basically, all you have to do is mix all the spices together and sprinkle them over the cauliflower, tossing the cauliflower making sure each piece has some spices on it. Preheat your oven to 400 F degrees and bake the cauliflower only about 10 minutes, you don’t want them to get mushy because they will lose all flavor.

These make a great side dish or can be eaten as a healthy snack.

      Hi Joan,
Actually I did store my leftover cauliflower poppers in tupperware, they weren’t as crispy as when I got them out of the oven, but they weren’t soggy either. They were still good.
