Avocado Egg Salad Wraps – easy, delicious and nutritious lunch for 435 calories a wrap.

What happens when you tell an egg joke?

It cracks up!

LOL, sorry, I couldn’t help it, I’m writing about an egg salad, what’s better than to tell an egg joke? Wait I got more.

Why can’t you tease egg whites? Because they can’t take a yolk!

What happens if you play table tennis with a bad egg? It goes ping then it goes pong.

OK, I’ll stop before you leave here. I will talk about my recipe now, because it’s so good and it’s one of my favorites for lunch.

Today’s star attraction is this beautiful avocado egg salad wrap. I was in a rush the other day and I needed to prepare my lunch for the next day, but I needed something quick. Well you can’t get any quicker than this avocado salad, it really takes you about 2 minutes after you boil the eggs, and the avocado egg salad is really delicious. I really recommend you try it if you’ve never had avocado egg salad before. It’s very flavorful from the avocado and the lime juice. Now I turned this into a wrap, but it would go wonderfully with some whole wheat bread.

Avocado Egg Salad Wraps

Ingredients

  • 2 Flatbreads or whole wheat tortillas
  • 1 avocado
  • 4 eggs boiled
  • 1 tbsp mayonnaise
  • 2 tbsp lime juice
  • salt and pepper to taste
  • 2 small tomatoes
  • lettuce

Instructions

  • After boiling the eggs, let them cool completely. Once cooled chop them up.
  • In a bowl mash the avocado with a fork. Add lime juice, mayonnaise, eggs and salt and pepper. Toss everything together.
  • Assemble the wraps by first adding lettuce and tomato. Divide the egg salad in two and add to each flatbread. Roll up the flatbreads and serve.
