Crockpot Wild Rice, Quinoa and Chicken Soup

Crockpot Wild Rice, Quinoa and Chicken Soup is very easy to make, just throw all the ingredients in the crockpot. Each serving has only 186 calories.

I have a confession to make to all of you. I love science fiction movies and science fiction shows.

Seriously.

Same with my hubby, as a matter of fact he’s the one that turned me into a true sci fi buff. I have seen all Star Trek series, every season, every episode, at least 2 times. I have seen all seasons of X Files at least 2 times. We own all Star Trek series, all Star Trek movies, Andromeda, Star Gate, Star Gate Atlantis, X Files. You name it, we got it! I mean I cried when they killed Data!! I can’t believe I actually admitted this to you, but it was a sad day for me, he was my favorite after all.

I hate the fact that there is no new Star Trek show on right now. This is a very depressing and sad time for me. There are a couple of new shows I love, Almost Human and Agents of Shield. Love love love these shows. If I had to pick a favorite I’d go with Almost Human just because I think Karl Urban is a hottie.

Don’t get me wrong, I do love a chick flick every once in a while but if you were to ask me if I had a choice between The Notebook and a Star Trek movie, I would totally pick Star Trek, I haven’t even seen The Notebook. Why am I telling you all this? Good question. The only answer I can think of is because this wild rice, quinoa and chicken soup is perfect for a cold winter day, a PJ day, a Star Trek day. This soup is healthy, it’s delicious and it’s nutritious! This soup is only 186 calories per serving, so beat that!

Do you see where I’m going with this? It’s Saturday morning, it’s cold and snowing outside. You don’t feel like leaving the house or getting dressed or brushing your hair. So you go in the kitchen, throw all these ingredients together in the crockpot, then go snuggle up with your hubby or doggie on your couch and watch Star Trek for the rest of the day.

It’s the perfect day for me.

Crockpot Wild Rice, Quinoa and Chicken Soup is very easy to make, just throw all the ingredients in the crockpot. Each serving has only 186 calories.

Ingredients

  • 1 large onion chopped
  • 1 large carrot chopped
  • 2 stalks celery chopped
  • 2 chicken breasts boneless and skinless, cut in one inch pieces
  • 1 cup wild rice and quinoa mix
  • 10 ounce cream of mushroom soup (1 can)
  • 1/2 teaspoon thyme
  • 4 cups chicken broth low sodium
  • 4 cups water
  • salt and pepper to taste
  • 1 teaspoon chicken bouillon granules
US Customary – Metric

Instructions

  • Chop all the vegetables and chicken and literally throw all the ingredients together in the crockpot and stir them up a bit. If you don’t have wild rice and quinoa mix, you can use just wild rice, or if you have them separate, 1/2 cup of each.
  • Cook in crockpot for 8 hours on low or 4 to 6 hours on high.

    Is the wild rice and quinoa to be cooked prior to adding to crockpot or added uncooked?
