Easy Monster Cookies Recipe

These easy monster cookies are such a fun treat! Made with white cake mix and a handful of pantry staples, these colorful cookies will be staring right back at you as you take a bite!

I’m a huge fan of cookies because of how many possibilities there are! I wanted to create a colorful, unique bite, that not only tastes delicious, but is SO easy to make! These little monsters check those boxes, plus they’re chewy, moist and adorable. I can’t wait for you to try them!

Ingredient Notes

  • Butter – Make sure it’s softened – not melted!
  • Cream Cheese – For super creamy and moist cookies and tons of flavor!
  • Cake Mix – I used a box of white cake mix.
  • Food Coloring – Use your favorite colors but these cookies are great with neon food coloring!
  • Powdered Sugar – We are rolling these monster cookies in powdered sugar!
  • Candy Eyeballs – To give our monsters some eyes of course! How else are they going to see us eating them?

How to Make Monster Cookies

  1. Preheat Oven: Preheat the oven to 325°F. Line a baking sheet with parchment paper.
  2. Mix Ingredients: Add the, butter, eggs, cream cheese and vanilla extract to a large bowl and mix until smooth. Add the cake mix and mix until well combined.
  3. Add Color: Divide the cake batter between 4 bowl, add a different dye color to each bowl and mix well. Roll dough into balls and then roll each ball through powdered sugar. To make this easier, use an ice cream scoop. Place cookies on prepared baking sheet.
  4. Bake: Transfer the baking sheets to the oven and bake for 10 to 12 minutes. While the cookies are still warm stick the candy eyeballs over the cookies. Cool completely before serving.

What can I add to these cookies?

Feel free to add any extra little goodies to these cookies! Some great options: Chocolate Chips, M&Ms, Nuts, Shredded Coconut, Candy Bits, Toffee Pieces.

How do I keep my cookies from spreading?

Use a silicone baking mat or parchment paper because they grip to the cookies! Coating your baking sheet with nonstick spray or butter creates an overly greasy foundation, causing the cookies to spread.

How to get soft, chewy cookies

Don’t over bake! When you over bake your cookies, they will turn hard.

How to tell when your monster cookies are done

Push the sides of the cookies very lightly with a spatula or your finger. If the edge stays firm and doesn’t fall inwards, then your cookies are done. If you see a noticeable indentation, your cookies likely need a few minutes more in the oven.

Leftovers

Store leftover cookies in an airtight container for 4 days at room temp, or up to 1 week in the fridge.

Freezing

Wait until your monster cookies have completely cooled, then freeze in an airtight container or plastic freezer bag for up to 3 months.

  • 6 tablespoon butter (softened)
  • 2 large eggs
  • 8 ounce cream cheese
  • 1 teaspoon vanilla extract
  • 1 box white cake mix
  • neon food coloring
  • ½ cup powdered sugar
  • candy eyeballs
