English Muffin Pizza is the after school snack that saves you from the 4 o’clock question about what there is to eat. Toasted muffin, marinara, a pile of mozzarella, and whatever’s in the fridge. Ready in 27 minutes, and you can freeze a whole tray for later.

Easy English Muffin Pizza Recipe

There’s a window between school ending and dinner where children become genuinely unreasonable, and I’ve come to think of English muffin pizzas as the solution to it.

They take almost nothing. Split muffins, toast them, sauce, cheese, toppings, into the oven. Twenty seven minutes start to finish, and most of that is the oven doing its thing while you get on with something else.

What I love about them is that everybody builds their own. Set the toppings out and let people go at it. Somebody will make a pizza that’s 90 percent pepperoni and no sauce, somebody else will construct something with pineapple that you’d rather not think about, and everybody eats happily.

The one thing that makes or breaks them is toasting the muffins first. Skip it and the sauce soaks straight in and you get a soggy, floppy disappointment. Five minutes in the oven before anything goes on top, and you get a crisp base that holds up.

Why You Have To Toast The Muffins First

Skipping this is the number one reason English muffin pizzas turn out disappointing, so I want to be clear about it.

An English muffin is full of nooks and crannies, which is wonderful for butter and terrible for tomato sauce. Untoasted, all those little pockets act like a sponge. The sauce goes straight in, the muffin softens, and 12 minutes later you’re eating something limp.

Five minutes in the oven cut side up dries the surface out and firms it up. Now the sauce sits on top instead of soaking through, and you get an actual crisp base under all that cheese.

It’s 5 minutes and it’s the difference between a good snack and a sad one. Don’t skip it, even when everyone’s hungry and standing in the kitchen looking at you.

Ingredients in English Muffin Pizza

  • English muffins (4, split in half): All those nooks and crannies are what make these better than sliced bread, because the cheese settles into them and the edges go crispy. Whole wheat works, gluten free works, and if you can find sourdough English muffins they’re excellent here. Split them with a fork rather than a knife if you want proper texture on the surface.
  • Marinara sauce (1 cup): Store bought is completely fine and it’s what I usually reach for. Use a thicker sauce if you have the choice, since a watery one will make the muffins soggy no matter how well you toast them. Pizza sauce, marinara, or leftover pasta sauce all work.
  • Mozzarella cheese (2 cups, shredded): The classic melt. Shred it yourself if you can be bothered, since pre shredded is coated in starch that stops it melting quite as smoothly. Cheddar, provolone, or a mix all work well.
  • Toppings (whatever you’ve got): Pepperoni, sliced olives, bell peppers, mushrooms, onions, ham, cooked bacon, pineapple if that’s your household. Keep them small and keep them light, because a heavily loaded muffin gets floppy and the toppings slide off when you pick it up.
  • Dried oregano (1 teaspoon): The thing that makes it taste like pizza rather than cheese on toast. Small ingredient, big job.
  • Garlic powder (1 teaspoon): Goes on top of everything and toasts slightly in the oven. Italian seasoning works if that’s what’s in the cupboard.
  • Olive oil (for drizzling): A little over the top helps the cheese brown and the edges crisp. Optional, but I do it every time.

How To Make English Muffin Pizza

Heat the oven to 375°F (190°C) and line a baking sheet with parchment. A toaster oven works too and uses a lot less energy for 8 little pizzas.

Toast the muffin halves cut side up for 5 minutes. Don’t skip this. It’s what stops the sauce soaking in and turning everything soft. Five minutes, dry surface, crisp base.

Spread the sauce. About a tablespoon per half, and resist the urge to go heavier. Too much sauce and you’ve undone the toasting you just did. A thin even layer, leaving a little border around the edge.

Cheese, then toppings. Cheese first means the toppings have something to sit in and they won’t roll off. Be generous with it. This is not the moment for restraint.

Sprinkle the oregano and garlic powder over everything, then a small drizzle of olive oil.

Bake for 10 to 12 minutes, until the cheese is melted and starting to brown at the edges. Keep an eye on them, because they go from beautifully golden to properly browned faster than you’d expect at this size.

Let them sit for a couple of minutes before serving. Molten cheese on a hot muffin is a genuine hazard and somebody always finds out the hard way.

Freezer English Muffin Pizzas

Assemble the pizzas completely, right up to the toppings, but don’t bake them. Put the whole tray in the freezer for about an hour until they’re firm, then transfer them to a freezer bag or container with parchment between the layers. They’ll keep for 2 months.

To cook from frozen: straight onto a baking sheet, no thawing, into a 375°F oven for 15 to 18 minutes. That’s about 5 minutes longer than fresh. The cheese melts, the base crisps, and nobody can tell.

Do a double batch while you’ve got everything out. It’s the same amount of mess whether you make 8 or 24, and future you gets an afternoon back.

A word on lunchboxes: I’d be honest with you, these aren’t great cold. They’re an after school snack or a quick dinner rather than something to send in a lunch bag. If you want the lunchbox version, wrap them warm in foil and they’ll hold up for a couple of hours, but by noon they’re not what they were.

Air Fryer And Toaster Oven

Air fryer: 350°F for about 5 to 6 minutes, in a single layer with a bit of space between them. Faster than the oven and the edges get extra crisp. Toast the split muffins for 2 minutes first, same principle as always.

Toaster oven: exactly the same as the oven, 375°F for 10 to 12 minutes. For 8 small pizzas this makes far more sense than heating a full size oven, and it’s what I’d use most of the time.

Microwave: you can, in about 90 seconds, and sometimes speed is what matters. But the base won’t crisp and the cheese won’t brown, so toast the muffin halves in a toaster first and accept that it’s the emergency version.

Why Yours Went Soggy

Four causes, all fixable.

You didn’t toast the muffins. This is the big one. Untoasted muffins absorb sauce like a sponge. Five minutes fixes it.

Too much sauce. About a tablespoon per half is plenty. More than that and there’s simply too much liquid for a small piece of bread to handle.

Watery sauce. Thin marinara releases a lot of moisture in the oven. If yours is loose, simmer it down for a few minutes first or use a thicker one.

Wet toppings. Fresh tomatoes, pineapple straight from the tin, or mushrooms that haven’t been cooked all release water as they bake. Pat them dry, or cook them off first.

Topping Ideas

Set them out in bowls and let everyone build their own. It’s the best part and it keeps children busy for 10 minutes, which is its own kind of gift.

Classic: pepperoni and extra mozzarella.

Hawaiian: ham and pineapple, drained well. Have the argument at your own table.

Veggie: bell peppers, red onion, mushrooms, black olives. Cook the mushrooms first so they don’t water everything down.

Breakfast: scrambled egg, cooked bacon, and cheddar instead of mozzarella. Genuinely good and it makes an English muffin pizza a reasonable breakfast.

BBQ chicken: barbecue sauce instead of marinara, leftover shredded chicken, red onion, and a little cilantro.

Buffalo: buffalo sauce, shredded chicken, mozzarella, and a drizzle of ranch after baking.

Make Ahead And Storage

Assembled ahead: build them, cover, and refrigerate for up to 24 hours before baking. Add a couple of minutes to the oven time since they’re going in cold.

Leftovers: 3 days in an airtight container in the fridge.

Reheating: oven or air fryer at 350°F for 5 to 7 minutes gets the base crisp again. The microwave works and takes 30 seconds, but the base goes soft. Fine for a snack, not the best version.

These English Muffin Pizzas are ready in 27 minutes and made with 4 things you probably already have. Toasting the muffins first is what keeps the base crisp instead of soggy. Assemble a batch ahead and freeze them for after school, then bake straight from frozen.

Ingredients

  • 4 English muffins (split in half)
  • 1 cup marinara sauce (store-bought or homemade)
  • 2 cups mozzarella cheese (shredded)
  • Toppings of your choice (such as pepperoni, olives, bell peppers, mushrooms, onions, etc.)
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • olive oil (for drizzling)

Instructions 

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Arrange the English muffin halves cut-side up on the baking sheet. Lightly toast them in the preheated oven for about 5 minutes.
  • After toasting, remove the muffins from the oven and spread each half evenly with marinara sauce.
  • Sprinkle a generous amount of shredded mozzarella cheese over each muffin half.
  • Add your chosen toppings. Feel free to get creative – you can make each muffin half a different flavor if you wish!
  • Sprinkle each muffin with a bit of dried oregano and garlic powder for extra flavor. Drizzle a little olive oil on top.
  • Bake the pizzas in the preheated oven for about 10-12 minutes, or until the cheese is melted and slightly golden.
  • Let the pizzas cool for a couple of minutes before serving.

Notes

  2. Go easy on the sauce. About 1 tablespoon per half. Too much and you’ve undone the toasting.
  3. Cheese before toppings. It gives the toppings something to sit in so they don’t slide off.
  4. Pat wet toppings dry. Fresh tomato, tinned pineapple, and raw mushrooms all release water in the oven.
  5. Watch the last few minutes. Small pizzas go from golden to browned quickly.
  6. Freezing: assemble without baking, freeze on a tray until firm, then bag for up to 2 months. Bake from frozen at 375°F for 15 to 18 minutes.
  7. Toaster oven: same temperature and time, and it makes far more sense than heating a full oven for 8 small pizzas.
  8. Let them cool 2 minutes. Molten cheese on a hot muffin is a real hazard.

Frequently Asked Questions

Why do I have to toast the English muffins first?

Because all those nooks and crannies soak up sauce like a sponge. Toasting dries out the surface so the sauce sits on top instead of sinking in, and you get a crisp base instead of a floppy one. It’s 5 minutes and it’s the most important step here.

What else can I use instead of English muffins?

Bagels, pita, naan, or thick slices of French bread all work. English muffins are my favorite because the size is right for one snack and the texture is ideal, but use what you have.

Are these good in a lunchbox?

Not really, and I’d rather tell you straight. They’re best warm from the oven. Wrapped in foil they’ll hold for a couple of hours, but by lunchtime they’ve lost what made them good. Treat them as an after school thing.

Can kids make these themselves?

The building part, absolutely, and it’s the best bit. Set out bowls of toppings and let them go. An adult should handle the oven, and everybody should wait the 2 minutes before eating, because melted cheese is hotter than it looks.
