I absolutely love making cobbler with fresh seasonal fruits. There’s something truly magical about taking the ripest and juiciest fruits of the season and transforming them into a delicious dessert. And this strawberry cobbler is no exception! Each bite is a burst of fruity perfection as the tangy sweetness of the juicy berries blends together with the golden buttery crust.
Now, I know you might be thinking that creating such a delectable dessert must involve hours of making pastry dough, chilling it, and then rolling it out into a crust. But this homemade cobbler recipe is actually a breeze to make! It’s way easier than pie or even crumble for that matter. In fact, with just a handful of pantry ingredients and some fresh strawberries, you’ll be well on your way to diving into a yummy warm, and comforting strawberry cobbler in no time!
Why You’ll Love This Strawberry Cobbler
- Quick And Easy! Perfect for novices and those who don’t love to be in the kitchen. With this easy cobbler recipe, you can have a ready to serve homemade dessert in just a little over an hour with only eight ingredients and a baking dish.
- Fresh Strawberry Bliss! When you pair plump and juicy fresh strawberries together with a perfectly baked buttery golden brown crust the result is an incredibly delicious comforting and fruity classic dessert.
- Family Approved! Get ready to impress your family and friends! This strawberry cobbler is destined to become one of your favorite go-to recipes for family gatherings, afternoon brunches, or casual date nights.
- Butter – Adds moisture and makes the cobbler crust buttery and delicious! Always use unsalted butter to control the saltiness. It can be substituted with margarine or coconut oil for a dairy-free option.
- Flour – Basic all-purpose flour is all you need for the base of the batter. Pastry flour also works well. For a gluten-free alternative, you can use a gluten-free all-purpose flour blend as long as it includes xanthan gum.
- Baking Powder – This leavening agent is responsible for giving the cobbler its light and fluffy texture.
- Salt – A pinch of salt helps to balance the sweetness and enhance all the flavor of the crust.
- Sugar – Adds a touch of sweetness and balances the tartness of the strawberries. I find that granulated sugar incorporates the best into the batter.
- Milk – Binds the dry ingredients together and adds moisture. Feel free to use any type of milk including non-dairy alternatives such as almond milk or oat milk.
- Strawberries – As the key ingredient they provide a burst of fresh berry flavor. Choose fresh, ripe, and ready to eat strawberries for the best results.
- Sugar – Used to macerate the strawberries and give texture to the filling. You can adjust the amount of sugar based on your desired level of sweetness.
This recipe is incredibly easy! Just follow these step-by-step instructions and you can create a scrumptious fresh strawberry cobbler with minimal effort in a little over an hour!
To begin, preheat your oven to 375°F (190°C). Next, put the unsalted butter into a 9×13-inch baking dish. Then put the baking dish into the oven for about 5 to 10 minutes to melt the butter. But make sure to keep an eye on it to prevent the butter from burning.
While the butter is melting, you can whip together the simple batter. First, whisk the flour, granulated sugar, baking powder, and salt together in a large mixing bowl. Now, stir the milk into the dry ingredients until it’s well combined and a smooth batter has formed.
Now, let’s move on to prepping the berries! Put the fresh sliced strawberries and half a cup of granulated sugar in a different bowl. Then gently toss them together until the strawberries are fully coated in sugar. This step not only sweetens the berries but also helps to bring out their natural juices.
After the butter has melted in the baking dish, carefully remove it from the oven. Then pour the batter evenly over the melted butter. But do not stir the batter into the butter! Next, spoon the sweetened strawberry mixture evenly over the batter. Again, do not stir!
With the batter and strawberry mixture in place, it’s time to bake! Carefully transfer your cobbler to the preheated oven. Then let it bake for about 45 to 50 minutes or until the top turns a lovely golden brown and the cobbler is fully cooked.
Once the cobbler has baked to perfection, remove it from the oven and let it cool for just a few minutes to set. Then serve it warm with a dollop of whipped cream or a big scoop of creamy vanilla ice cream!
Frequently Asked Questions
Can I use other berries?
While this recipe focuses on strawberries, you can experiment with other fresh berries such as blueberries, raspberries, blackberries, cherries, or a combination of mixed berries. This recipe even works with other fruits and is very similar to my peach cobbler.
Can I use frozen strawberries for the cobbler?
Fresh strawberries are generally recommended for the best results. However, you can use frozen strawberries. Just keep in mind that they tend to release more moisture during baking, which may impact the texture.
Why is my cobbler soggy?
Underbaking can result in a soggy cobbler. This is why it’s important to make sure that the crust is golden brown and the filling is bubbling before removing your cobbler from the oven. Frozen fruit can also impact the texture. Lastly, using a baking dish that is too small can cause the fruit juices to accumulate and create a soft mushy texture.
Expert Tips
- Use ripe strawberries. Berries that are vibrant in color, fragrant, and slightly soft to the touch are perfectly ripe and the sweetest.
- Adjust the amount of sugar. Make it lower in sugar by using less to macerate the strawberries. You can also use more sugar if your strawberries aren’t quite sweet enough.
- Mix until smooth. There should be no lumps of flour in the batter after it’s made. It’s important that the ingredients are fully incorporated.
- Keep the butter melted. Make sure the butter is still fully melted and evenly spread out on the bottom of the baking dish before you add the batter. This ensures a consistent texture.
- Use a timer. Every oven is different. Keep a close eye on the cobbler during the last 10 minutes of baking. Once the crust is golden brown crust and cooked through it’s ready.
Storage
Leftover strawberry cobbler is best stored in the dish that you baked it in or it can be quite messy. So once your cobbler has completely cooled, just cover it well with plastic wrap and store it at room temperature for up to 3 days or in the fridge for up to a week. It’s also possible to store the cobbler in the freezer for up to 2 months.

While the recipe is easy and tasty, it is more like a cake instead of a traditional cobbler. Mine also stuck to the bottom of the pan, which was unexpected due to the melted butter used. I followed recipe, directions etc and I bake quite a bit. 🤷🏻♀️
I usually am very happy to try Jo’s recipes and enjoy her creativity!!
Hey there! I appreciate your feedback and I’m sorry to hear that the texture wasn’t what you were expecting. The topping of this cobbler leans more towards a cakey-biscuit type, but everyone’s preference for cobbler can vary. As for the sticking issue, it could be due to the type of pan used or maybe it needed a bit more time to cool before serving. Nonetheless, I appreciate your support and I’m glad to hear you’ve enjoyed other recipes of mine.
Thanks for the feedback, I forwarded your pizza recipe to my son, great instructions & video, he’s looking forward to trying his 1st yeast experiment 😊
This cobbler was so good! I also made the peach one omg I’ve started to love baking because of it!
So glad you enjoyed both recipes!
This was by far the best cobbler I have ever made and it was really easy to make.
I’m so glad you liked it!
Loved it! I could have eaten it all myself!
So glad you enjoyed it!
I had a bunch of strawberries in the fridge about to meet their end and this popped up in my email today. Perfect timing! It was super quick to make! It felt a bit odd melting a stick of butter like that and then just dropping everything on top and not mixing!!! But it’s all good, it turned out great. We had it with vanilla ice cream and it was gone in no time. The cobbler part was more cakey for me than I expected. I think I prefer the pie or crumble type cobbler than cakey but it was still good! Thanks for the recipe.
My pleasure, glad you enjoyed it!
