Easy and Healthy Egg Salad Sandwich – perfect for lunch.


I call this egg salad sandwich healthy because it uses very little mayonnaise, so it’s a great lunch idea, super easy to make and it’s delicious. If you are watching your cholesterol, feel free to reduce the egg yolks and add additional egg whites. Here are the ingredients you’ll need to make 2 sandwiches, just double the recipe if you need to make 4:

  • 4 eggs
  • 1½ teaspoons mayonnaise
  • ¼ red onion, minced
  • 1 tbsp prepared mustard
  • ½ tsp dried dill weed
  • ½ tsp paprika
  • salt and pepper to taste
  1. This recipe really is as easy as boiling eggs, so in a saucepan place the eggs and add enough water to cover the eggs. Bring the water to a boil, cover the saucepan and remove from heat. Let the eggs stand in the hot water for about 12 minutes, then remove, cool and peel.
  2. Start chopping the eggs, then in a large bowl, add the chopped eggs, mayo, dill, paprika, mustard, onion and salt and pepper. Mix well and mash with a fork. And that's it, super easy. Serve on some nice whole wheat bread, you could also lightly toast the bread, and serve the salad over some nice crisp lettuce and you've got yourself a wonderful lunch.
