Pomegranate Elderflower Spritzers – A sparkling and refreshing cocktail that’s perfect to kick start any holiday celebration or special occasion!

I thought I’d end the year with a wonderful and festive cocktail, perfect for your New Year’s Eve party! I’ve been making this a lot since Christmas because I just simply love it. I’m not one that loves strong drinks, so this spritzer is perfect for me. Definitely my kind of cocktail, I could actually drink a few of these and still be able to hold a conversation after, and this is coming from someone who can’t hold their liquor. One glass of wine and I’m snoring…ahem sleeping.
But first I can’t believe 2015 is over, what a year! A lot of good things happened this year like my book, which I’m really excited to see it published in 2016, and I’m really thankful to all of you my loyal readers who continue to read my blog day after day and try my recipes. I’m looking forward to see what challenges 2016 will bring. 2015 was a great year in the blogging department with some great recipes that you guys loved, so I’m hoping that in 2016 my creative juices will still work and I can come up with some new ones.
To end this year though, let’s end it in style, shall we? I mean look at these spritzers, don’t they just look gorgeous and make you want to have one? Like I said, I couldn’t stop at just one, yeah they’re really good. The hardest part of this cocktail recipe is seeding a pomegranate, which of course if you want the easy way out you could buy the seeds, they come in these cute little cups, saving you all the trouble, seen them at Costco. But as usual, I’m a sucker for punishment and love to mess up my entire kitchen, with pomegranate seeds flying everywhere and the juice all over the counter and floor. Once that’s done however, it’s a piece of cake to make this. All you need is a big pitcher and mix all the ingredients together. Speaking of which, have you ever had elderflower liqueur before? It’s amazing, so fresh and it really has all the wonderful aromas of elder flower, which I’ve always been a sucker for, really love it. When paired together with a bit of pomegranate juice, some great sparkling white wine and club soda, you end up with an incredible spritzer.

- 1 cup Prosecco or sparkling white wine, chilled
- ¼ cup pomegranate juice
- ¼ cup Elderflower liqueur such as St. Germain
- 1 cup club soda
- ½ cup pomegranate seeds
- In a large pitcher add all the ingredients and stir.
- Taste and adjust ingredients as desired.
