American Macaroni Salad – traditional salad but made special with a favorite ingredient; bacon.
You all know my dear beagle that I love with all my heart. Here’s a picture of her in case you don’t know what she looks like.
As you can see she’s getting up there in age, she’s 8 years old right now. A senior dog you might say. For the most part, she is the best dog in the world. I mean look at that innocent face. You look at that face and you think that dog could do no wrong. But that dog, that darling beagle always has one thing on her mind.
So to make a long story short, we come home today and usually my darling Mia greets us at the door with her tail wagging and happy as can be that we’re home. But not today! Today there was silence. So immediately we get worried that something happened. We call her and in a few seconds she comes to us, tail wagging and all, but she’s also licking her lips and looks extremely happy. So my poor husband, all worried, runs to the kitchen to see what she’s gotten herself into now. She got to her bag of dentastix.
Dentastix are these long dental treats that are supposed to be good for their teeth. Usually we give her one a day, and it’s always at 6:30 every night, and she knows if we’re late. But today, she somehow grabbed the bag of dentastix from the table and opened it, keep in mind it’s like a ziploc bag, and she helped herself to the bag. I’m not sure exactly how many sticks there were in there but when we got home there were 2 left, so I know she had at least 5 sticks. Now I don’t mind she almost finished the bag, but we were just worried that she’d make herself sick. Honestly I didn’t know she could eat so many. I always used to say I wonder what would happen if I gave her the whole bag. Now I know, she’d eat the whole thing. I mean these treats smell really good, they smell like bacon and she acts like she’s addicted to them.
But so far she’s ok, which makes a nice segway into my recipe of the day.
Here’s your classic American Macaroni Salad but with one of my favorite ingredients; bacon.
Simple. Everything is better with bacon, right? Well why not bacon in a macaroni salad.
Whether or not you use bacon in this classic macaroni salad, it is still one of my favorites. It’s a super quick and fantastic salad to put together in 30 minutes. The beauty of macaroni salad is that it’s served cold thereby making it ideal for picnics, lunches, and even dinners. This is also one of those salads that is perfect for pot lucks because it’s a great side dish.
But enough about why this salad is so great. We all know it’s great and we love it.
It’s because it tastes delicious.
Macaroni salad has a few staple ingredients, elbow macaroni, celery, onion and mayonnaise. These are a few of the ingredients in a classic american macaroni salad. However, other cultures make macaroni salad too, such in Puerto Rico it’s made with cubanelle peppers, pimentos and onions.
- 2 cups dry elbow macaroni, cooked, rinsed, and drained
- ⅓ cup diced celery
- ¼ cup minced red onion, chopped
- 1 tbsp parsley, chopped
- 6 slices bacon, fried and chopped
- ½ cup diced vine-ripened tomato
- ½ cup mayonnaise
- ¾ tsp dry mustard
- 1½ tsp sugar
- 1½ tbs[ cider vinegar
- 3 tbsp sour cream
- ½ tsp salt, plus more to taste
- freshly ground black pepper
- In a large bowl combine the macaroni, celery, onion, bacon, parsley and tomato.
- In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt.
- Pour the dressing over the salad and stir to combine. Season with salt and pepper to taste. Serve.
- Store covered in the refrigerator, for up to 3 days.
