These roasted red peppers are truly one of my all time favorites. I can’t wait for this time of the year to buy these sweet pointed red peppers, so I can roast them and serve them in garlic sauce. I love them.
For as long as I can remember, every year my mom made these (and still does) and it was always my job growing up to clean them up after they were grilled, and I have to say I loved every minute of it, because I knew what was coming next, eating them. They are so good in this garlic sauce, trust me, they are just delicious. I love to make these and use them as a side dish to a great steak, or use them as a replacement for a salad.
Unfortunately I can’t find these peppers all year round, and honestly I never tried making these with the regular red bell peppers, just because it’s been a tradition for us to always use these pointed red peppers. I remember my parents buying a huge box of them every time they’d find them at the market and tradition is tradition, so I don’t want to mess with tradition. I’m always going to use the pointed peppers for this recipe.

This recipe is really super easy to make. Basically you just have to wash these peppers and you can either grill them or roast them in the oven until they are almost completely charred. The more charred they are the easier they are to peel them.

You have to clean them well, remove all the peel and the seeds from the inside. The garlic sauce is really easy to make as well, it’s just minced garlic, salt, water and olive oil and you pour this over the peppers and voila! Happiness and deliciousness!

Ingredients:
- 6 large sweet pointed red peppers
- 4 garlic cloves, minced
- 2 tbsp olive oil
- 1/4 cup cold water
- salt to taste
Instructions:
- Grill the peppers, or roast them in the oven until they are almost completely charred.
- Let cool and remove all the peel and seeds from them and wash them well.
- In a small bowl mix the minced garlic, olive oil, water and salt and pour the sauce over the peppers.
- Serve as a side dish or replacement for a salad.

I’m going to make this tonight, it looks delicious! The picture shows some type of herb sprinkled atop the dish, but I don’t see anything listed in the ingredients. Is it basil or flat leaf parsley? Thanks!
