A Healthier Chocolate Chip Peanut Butter Cookie
I haven’t made cookies in a long time, but my husband was in the mood for some cookies because he’s been sick for the past couple weeks. I love these cookies because they are a a healthier version of peanut butter cookies. And not only peanut butter cookies, but they also have chocolate chips in them, and, are you ready for this, rolled oats!
Yes! Rolled oats in peanut butter cookies. I made 24 cookies from this recipe which works out to only 171 calories per cookie.
Yes, they’re outrageous!
Yes, they’re healthy!
Why? Because they’re not loaded with a couple cups of sugar like most cookie recipes, there’s only 1/3 cup of brown sugar and 1/3 cup of white sugar and they are healthy because of the rolled oats! You know oats are good for you!

Outrageous Chocolate Chip Peanut Butter Cookies
Ingredients
- ½ cup butter (softened)
- ⅓ cup brown sugar
- ⅓ cup white sugar
- 1 teaspoon vanilla extract
- 1 egg
- ⅔ cup peanut butter
- 1 teaspoon baking soda
- 1 cup all purpose flour
- ¼ teaspoon salt
- ½ cup rolled oats
- 1 cup semi sweet chocolate chips

Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, beat the butter, white sugar and brown sugar until light and smooth. Add in the peanut butter, vanilla and egg until well blended. Combine the flour, baking soda and salt; stir into the batter just until moistened. Mix in the oats and chocolate chips until evenly distributed. Drop by tablespoonfuls on to lightly greased cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven, until the edges start to brown. Cool on cookie sheets for about 5 minutes before transferring to wire racks to cool completely.
