A Healthier Chocolate Chip Peanut Butter Cookie

I haven’t made cookies in a long time, but my husband was in the mood for some cookies because he’s been sick for the past couple weeks. I love these cookies because they are a a healthier version of peanut butter cookies. And not only peanut butter cookies, but they also have chocolate chips in them, and, are you ready for this, rolled oats!

Yes! Rolled oats in peanut butter cookies. I made 24 cookies from this recipe which works out to only 171 calories per cookie.

Yes, they’re outrageous!

Yes, they’re healthy!

Why? Because they’re not loaded with a couple cups of sugar like most cookie recipes, there’s only 1/3 cup of brown sugar and 1/3 cup of white sugar and they are healthy because of the rolled oats! You know oats are good for you!

But most importantly these cookies are so tasty, so delicious, you will love them.

Outrageous Chocolate Chip Peanut Butter Cookies – a healthier peanut butter cookie for only 171 calories a cookie.

Ingredients

  • ½ cup butter (softened)
  • ⅓ cup brown sugar
  • ⅓ cup white sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • ⅔ cup peanut butter
  • 1 teaspoon baking soda
  • 1 cup all purpose flour
  • ¼ teaspoon salt
  • ½ cup rolled oats
  • 1 cup semi sweet chocolate chips

Instructions 

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, beat the butter, white sugar and brown sugar until light and smooth. Add in the peanut butter, vanilla and egg until well blended. Combine the flour, baking soda and salt; stir into the batter just until moistened. Mix in the oats and chocolate chips until evenly distributed. Drop by tablespoonfuls on to lightly greased cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven, until the edges start to brown. Cool on cookie sheets for about 5 minutes before transferring to wire racks to cool completely.

Thanks Jo. Delicious! I was short on chocolate chips so used half chocolate, and half butterscotch chips. Fabulous! Will definitely make again.

Absolutely Fabulously Wonderful. Made two times, both with honey instead of white sugar and chunky peanut butter. Used dark brown sugar first time but switched to light brown on second try. Also increased peanut butter to full cup on second time. Will let you know how the second batch turns out.

I made with super chunky peanut butter and the cookies crumbled and didn’t set up. They were delicious crumbles, however. Next time, I’ll use creamy peanut butter.

I made these and I also used super chunky (Jif) peanut butter. They turned out perfect. I substituted butter flavor shortening for the butter – I always do this with chocolate chip cookies because they do not spread out on the cookie sheet while baking and so hold their shape so much better. Everyone who tried them loved them.

Hi Jo! If I want to make these without rolled oats, how much flour should i add into the dough?

Add enough just until the dough comes together and can be rolled in your hands without sticking!

This was a huge hit at the potluck. They were just the right amount of sweetness, moist, great peanut butter flavor, and had a great texture. I will definitely make this again.

These are dangerously delicious. I made a batch, asked my daughter to taste test it and turned my back and 3 vanished! Wow! She said it was her breakfast, HUH!
Anyway, I recommend always doubling this batch because they’re that GOOD!!

I made these last night. Thank you soooo much! They are absolutely perfect. Everything I wanted in this cookie 🙂 I used a dark chocolate slab and chopped it into little chunks but everything else was the same. Much love

Jo, I LOVE cookies and could eat 24 of these in two days! I’d like to double the recipe but have heard on various cooking shows that baking recipes should not be doubled. You should just bake them twice. That seems like a lot of extra work. I think it has something to do with the leavening. Do you know if this recipe can be doubled? Thanks.

Hmm, I’ve never heard that before, I’m pretty sure you could double it. I’ve doubled recipes before many times and everything still turned out great.
