Super Easy Bacon Cheddar Biscuits

How about some yummy biscuits. These biscuits have bacon, cheddar and onions in them and are absolutely delicious. These are great for breakfast or whenever you just need a snack, and are very filling. They are very easy to make really, it only took me maybe about 15 minutes to put them together and they bake just as quickly in 25 minutes you have these decadent biscuits. They are also versatile as you can make biscuits with whatever you want, so if you don’t like the onions, feel free to omit them, but trust me, you’ll want the bacon in there.

Ingredients You’ll Need

  • All-purpose flour: Provides the structure for the biscuit. Substitute with a gluten-free blend if needed.
  • Baking powder: Helps the biscuit rise and become fluffy. If out, use a half teaspoon of baking soda and a teaspoon of cream of tartar.
  • Salt: Enhances flavor. Sea salt or kosher salt can be used.
  • Butter: Adds fat and flakiness. If preferred, you can use lard or shortening.
  • Bacon: Offers smokiness and crunch. Turkey bacon is a leaner option.
  • Egg: Binds ingredients together. Flaxseed or chia seed mix can be a vegan replacement.
  • Milk: Adds moisture. Almond, soy, or oat milk can be used for dairy-free options.
  • Vegetable oil: Gives moisture and helps with texture. Can substitute with melted butter or coconut oil.
  • Onion: Adds sweetness and depth. Green onions or shallots could be alternatives.
  • Cheddar cheese: Brings in a creamy, tangy flavor. Try using Monterey Jack or Swiss for variations.

How To Make Bacon Cheddar Biscuits

You’ll need to fry about 10 slices of bacon cut in half. While the bacon is frying chop up half an onion. Once the bacon is done, take it out and place it on some paper towels to soak up some of the fat. Pour some of the oil from the bacon out of the frying pan and fry the onions. Don’t fry the onion too much, just until it becomes translucent. Chop up the bacon into small pieces.

A plate of chopped bacon and fried onion

In a large bowl, add 2 cups of flour, 1 1/2 tsp baking powder, 1 tsp of salt and mix well. To the flour mixture add 1/4 cup of butter cut in small pieces.

A bowl full of flour, baking powder and salt with a small piece of butter in the middle

Using a pastry cutter or two knives start cutting into the butter. Use your hands if you have to but continue until mixture resembles small peas. In a small bowl add 1/2 cup of milk, 4 tbsp of oil and 1 egg. Mix the wet ingredients together and add to the flour mixture. Mix together well. Add the bacon and onion to the mixture. Mix well then add the a cup and a half of cheddar cheese.

Bacon, fried onion and cheddar cheese are added to the bowl of flour.

Mix everything together, use your hands if you have to.

Roll out the dough so that it’s about 3/4 of an inch in thickness and using a 2″ cookie cutter, cut it into biscuits.

Expert Tips

  1. Cold Butter is Key: Always use cold butter for flakier biscuits. The trick of grating the butter ensures it’s evenly distributed.
  2. Don’t Overmix: It can be tempting, but overmixing can lead to dense biscuits. Mix just until combined.
  3. Use a Sharp Cookie Cutter: This ensures the edges are cut clean, helping the biscuits rise uniformly.
  4. Rotate Halfway: To ensure even browning, consider rotating the baking tray halfway through baking.
  5. Customize with Herbs: Feel free to toss in some fresh herbs like chives or rosemary to enhance flavor.

Instructions

  • Preheat oven to 350℉.
  • Fry the bacon then the onion. Chop up the bacon in small pieces.
  • In a large bowl mix the flour, baking powder, and salt. Add the butter and gently mix it in with the flour.
  • In a small bowl mix the milk, egg, and vegetable oil then add the wet ingredients into the flour mixture.
  • Add the bacon, onion, and cheddar to the mixture and combine everything but don't over-mix.
  • Roll out the dough so that it's about ¾ of an inch in thickness and using a 2" cookie cutter, cut it into biscuits. Bake for 25 min.

Notes

  1. For a spicier kick, consider adding in some diced jalapeños or a pinch of cayenne.
