BBQ Chicken Mango Quesadillas Recipe

If you like Chicken Quesadillas and Mango Salsa then you are in for a real treat! This BBQ chicken mango quesadillas recipe has a bit of both, but with some BBQ sauce added. The quesadillas are layered with an incredible combination of chicken, cheese, fresh mango, cilantro, and BBQ sauce that blends together like a match made in heaven in a yummy warm flour tortilla.

But the best part is you don’t actually need to make mango salsa! This recipe only calls for freshly sliced mango. Because normally onion, lime, and salt are added to mango when it’s used in savory dishes to round out all the flavors. However, in this case, the BBQ sauce adds the acidity and salt needed to balance the mango. It does a fantastic job of marrying all the flavors together and you can use any type of BBQ sauce you like to make these quesadillas.

As for how you serve them, the options are endless! Snack, lunch, or dinner, they will be a hit! These BBQ Chicken Mango Quesadillas are so tasty that in my house they sometimes don’t even make it to a plate from the pan! That being said, they make a wonderfully easy appetizer or even dinner with a side of Refried Beans and Cilantro Lime Rice.

  • Quick and Easy! This simple 7-ingredient chicken quesadilla recipe requires no special skills and comes together in just 15 minutes using already-cooked chicken and store-bought BBQ sauce. 
  • Mango Cheesy Chicken! Bursting with layers of flavor, these perfectly balanced sweet and savory chicken quesadillas filled with melted cheese, fresh mango, and BBQ sauce are addictively good!  
  • Crowd Pleaser! Set a tray of these tasty quesadillas out at your next party or family gathering and they will disappear before your eyes. Your family and friends will fall in love with this easy to make appetizer.

Ingredients You’ll Need

  • Flour Tortillas – I used small 6” flour tortillas. But any size can work. However, if you use larger ones, you will need less of them or more filling.
  • Chicken – You will need cooked and shredded chicken for this recipe. 
  • Cheddar Cheese – I like to use shredded cheddar cheese. Yet, Monterey Jack or Colby Jack are yummy choices too.
  • Mango – Use ripe and ready to eat mango for the best flavor.
  • BBQ Sauce – Any type of BBQ sauce can be used from sweet to spicy. It’s totally a personal preference.
  • Cilantro – It goes wonderful with fresh mango, but feel free to omit it if you absolutely do not like cilantro. 
  • Butter – Used to grease the pan. Always use unsalted butter to avoid oversalting food. 

How To Make BBQ Chicken Mango Quesadillas

This recipe is super simple and requires very little effort. You can whip these yummy quesadillas together in just a matter of minutes! 

Build A Quesadilla

First, melt a little bit of the butter in a small pan over medium heat making sure to cover the entire surface of the pan. Now, lay a flour tortilla flat in the skillet and move it around until it’s buttery. Next, top the tortilla with a third of the cheese, then a third of the shredded chicken, and a few mango slices. Then drizzle everything with a bit of the BBQ sauce and sprinkle with some fresh chopped cilantro.

Cook The Quesadillas

Once your quesadilla is built, cook it until the tortilla is golden brown on the bottom. Then lay another tortilla on top and carefully flip the quesadilla over. Now, cook the other side until it’s golden brown on the bottom too. Then repeat the process with the remaining ingredients.

Serve And Enjoy

After all the BBQ chicken mango quesadillas have been made, cut them into triangles. Then serve them with some wedges of fresh lime along with a side of sour cream, Guacamole, and Homemade Salsa if you like.

Can I Use Other Fillings?

Yes, of course! The chicken can be replaced with any type of protein. Beef, pork, and shrimp are all yummy options. Feel free to try different cheeses too. As long as they melt, any cheese will work. You can also add some vegetables like corn, diced green and red bell pepper, or black beans if you like. As for spices, cumin, garlic powder, and oregano are super yummy. Even a dash of taco seasoning or hot sauce will add more flavor. 

Do I Use 1 Or 2 Tortillas For A Quesadillas?

There is no right or wrong way to make a quesadilla! You can use 2 small tortillas like I do in this recipe and layer them like a sandwich or just use one large tortilla. If you decide to use 2, just follow the instructions in this recipe. If you decide to use just one, once you lay a large tortilla on the pan only put the filling on half of it and then fold the bare half over the filling. 

Should I Use Corn Or Flour Tortillas For Quesadillas?

I prefer to use flour tortillas when making quesadillas. However, both corn and flour will work. Just keep in mind that corn tortillas are not as soft and flexible as flour tortillas. So quesadillas made with corn tortillas may turn out a little crispy.

Expert Tips

  1. Use ripe mango. Make sure your mango is ready to be eaten. Unripe mango is very sour and bitter. We want the mango to add some sweetness.  
  2. Cook at a medium temp. Cook the quesadillas at a medium temperature to allow the cheese time to properly melt without burning the flour tortilla.
  3. Keep warm in the oven. Keep the already-cooked quesadillas warm in the oven while you assemble and grill the others. Just turn your oven on to 200°F (93°C) and put them on a sheet pan.

Storage

Leftover quesadillas will keep in the fridge for up to 5 days in an airtight container. To reheat, put them in the microwave for a few minutes on medium power or in a toaster oven at 350°F (177°C) for about 5 minutes. They can also be stored in the freezer for up to 3 months when double-wrapped in plastic wrap. Then you can reheat them from frozen in the oven at 350°F (177°C) for about 15 to 20 minutes.

Ingredients

  • 6 small flour tortillas (6 inch)
  • 2 cups chicken (cooked and shredded)
  • 2 cups cheddar cheese (shredded )
  • 1 mango (peeled and sliced)
  • ½ cup BBQ sauce
  • 2 tablespoons fresh cilantro (chopped)
  • 1 tablespoon butter

Instructions

Notes

I made these on 10 inch tortillas. Put the ingredients on half and folded the other half over. I put two in a larger frying pan and heated until the cheese melted then turned them over to do the other side. Delish!

Usually I just buy a whole roast chicken and I use the chicken from that, or if I don’t have a roast chicken I’ll just boil some chicken breast for about 20 minutes and use that.
