My Cobb Salad is full of crispy bacon and juicy chicken breast amidst tender hard boiled eggs, fresh avocado & tomatoes – with blue cheese crumbles atop a bed of crisp romaine lettuce. Paired with a tangy homemade dressing – this salad has all of the fixings and all of the flavor! Perfect for any meal.

Looking for a salad that isn’t boring? Cobb salad is the answer! Every bite is loaded with different elements to enhance your salad experience. This is a salad that won’t leave you feeling empty. It’s filling and can be eaten as a meal on it’s own!

Being one of my all time favourites, I had to make my own version. Cobb salad has bold flavors, is packed with goodness and, the best part? It has bacon in it! A quick and easy salad that will have you smiling from the inside out.

What is Cobb Salad?

Cobb salad is a classic. The perfect balance of just the right ingredients made in the easiest way possible! Typically made with chopped greens, tomato, bacon, grilled or roasted chicken breast, hard-boiled eggs, avocado, chives, Roquefort cheese, and a red-wine vinaigrette type dressing. Phew, that was a mouthful, but trust me, you’ll want a mouthful of this salad.

Ingredients

Dressing:

  • Olive Oil – You can substitute with sunflower, safflower, avocado or vegetable oil.
  • Red Wine Vinegar – Balsamic vinegar, white wine vinegar, apple cider vinegar and rice vinegar can all be used as substitutes.
  • Dijon Mustard – This brings a nice flavor to the dressing. You can use yellow mustard or honey mustard if you don’t have dijon.
  • Garlic – Minced. Fresh is always best!
  • Sugar – You can substitute with honey or agave if you wish.
  • Italian Seasoning – A blend of oregano, rosemary, thyme and basil. If you don’t have Italian seasoning you can use a mix of any of the above.
  • Salt & Pepper – To taste.

Salad:

  • Romaine Lettuce – Washed and dried, coarsely chopped. You can use any type of lettuce to your preference.
  • Eggs – Large, hard boiled.
  • Bacon – Cooked until crisp and chopped.
  • Chicken Breast – Cooked and diced.
  • Cherry Tomatoes – Halved. You can use any type of tomato you like.
  • Avocado – Thinly sliced.
  • Blue Cheese – Crumbled. You can substitute feta cheese if you prefer.

How to make Cobb Salad

  1. Make the dressing: Add all the dressing ingredients to a jar, close the lid and shake it well. Set aside.
  2. Assemble the salad: Spread out the romaine lettuce, top with chicken, avocado, bacon, cheese, tomatoes and eggs.
  3. Toss the salad with the dressing and serve: Drizzle the dressing over the salad and toss well. Serve.

Other additions?

Traditional Cobb salad is made with the ingredients above, but who says you can’t amp up this salad even more? Try adding these:

  • Watercress
  • Bell Peppers
  • Cucumber
  • Sprouts
  • Ham
  • Olives
  • Corn
  • Peas
  • Onion/Chives
  • Croutons
  • Radish
  • Steak

What to serve with it

Cobb salad can be a meal on its own but why not try pairing it with some nice, homemade bread! Try these recipes:

Leftovers

Your salad can last anywhere between 1-5 days. Depending on if you have already dressed the salad or not, is a factor. Undressed salad will keep for a few days longer, typically 3-5 days, than if the salad already has the dressing incorporated.

If the salad is already dressed, it’s best that day, and might last another day in the fridge but the lettuce will get soggy.

Equipment

  • Glass Mixing Bowl Set (3 piece)

Ingredients

Dressing

  • 1/2 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 2 cloves garlic minced
  • 1 tsp sugar
  • 1 tbsp Italian seasoning
  • 1/2 tsp salt or to taste
  • 1/2 tsp pepper

Salad

  • 1 head romaine lettuce washed and dried, coarsely chopped
  • 4 large eggs hard boiled
  • 6 slices bacon cooked until crisp and chopped
  • 2 chicken breasts cooked and diced
  • 6 oz cheery tomatoes halved
  • 1 avocado thinly sliced
  • 4 oz blue cheese crumbled, or feta cheese

Instructions

  • Make the dressing: Add all the dressing ingredients to a jar, close the lid and shake it well. Set aside.
  • Assemble the salad: Spread out the romaine lettuce on a large serving platter, then top with chicken, avocado, bacon, cheese, tomatoes and eggs.
  • Toss the salad with the dressing: Drizzle the dressing over the salad and toss well. Serve.

Recipe Notes

  1. For the chicken you can use the breast from a rotisserie chicken or make your own chicken breast easily with this recipe.

    Typically, we go out for lunch every Saturday but at this time, not so. So on Saturdays, I try to make something that will serve as our lunch as well as our dinner. This salad was this weeks choice and it was amazingly good! We liked every ingredient and the dressing was wonderful.
